Ok, I have now baked the Pumpkin Spice Cake.

1. For Flavor I give it 10. My husband brought some of the cake to work with him when it was three days old. He works in a restaurant and shared it with two of the chefs. They loved it.
2. The texture was good and it cut really well without any crumbs falling off. It is a denser cake, which I expected since it has pumpkin pure in it. 3. Moisture was perfect and stayed moist for days.
4. Recipe was easy, but has a few more steps than the basic cakes.
5. Because it has a few more ingredients than basic cakes, the cost is slightly higher (spices, pumpkin pure and fresh oranges for orange zest.) 6. I made cupcakes with half the batter and they baked perfectly with a nice round dome on top.

I also took pictures of both the cake and the cupcakes, but I don't have any other websites to link it to. It's too bad we are not allowed to upload these into the galleries as an exception just until they have fixed the problem with uploading photos to the posts.

Oh, and I used the guide for 1 cup of AP flour being 128 grams. Thank you Springlakecake for the link. I can't believe I never looked that up before. It makes it much easier and accurate!

Ok so i finally baked the allrecipies spice cake by pam anderson heres my review

1) I give it an 8 for flavor. The aroma was fantastic and the flavor was good but i could of used just a little more sumthin to put it at a 10

2) The texture wasnt bad but there were a couple air pockets that i didnt really care to much for although i will say it was lighter than i expected and crumbled little i give it a 7.

3) Not dry but not as moist as i would ultimatly like i give it an 8

4) Super easy recipe becarful not to overmix i give it a 9

5) Cost was very basic if you have all the spices already i give it a 9

6) cupcakes were great. sturdy and a nice dome 10.


Overall i give it an 8. Dont think its quite perfect but i would make it again maybe with some substitutions however. All my testers liked it and said they would purchase them as cupcakes in a bakery. O i also topped them with maple brown sugar swiss merangue buttercream after the judging and it was flippin fantastic! the best flavor ever! yummmm

Results on Old South Spice Cake, I had 14 people try the cake.

Flavor: 8.7 / 10
Moistness: 8.6 /10
Texture: 8.4 / 10

Ease of recipe: Cake was fast and easy, filling was easy, but I thought too runny, oozed out the sides, frosting was a nightmare.

I boiled it with a candy thermometer, and beat it to death, first it would not get thicker, didn't really fluff up like I thought it would, and then suddenly froze. This is very likely entirely my fault, as I had never made this type of frosting before, and no doubt over beat or something.

The cake looked so bad I ended up icing over the caramel frosting with vanilla buttercream.

Cost of Recipe: I'd say average.

Cupcakes: Sorry, didn't try.

Overall, I have to say I probably wouldn't make this cake again, just because of the filling and frosting issues. It was a nice cake, but it wasn't wow. Again - likely entirely my fault.

I made the pumkin spice cake and putting the recipe in my cake boss software it is $5.04 to make just for ingredients. I also used it to carve a 3d pumpkin and it worked great, everyone loved the flavour.
The one recipe make 3 8" rounds.

Results on Guinness and Spice Cake, I had 14 people try the cake.

Well, what can I say. After 2 unsuccessful attempts at the original recipe, I took Joyfull4444's suggestion, and tried merging the Gramercy Tavern Gingerbread recipe with the Guinness and Spice recipe. Which was pretty darn tasty, I thought.

I had one Guinness still in the fridge, so I baked the Gramercy Tavern Gingerbread, exactly as written, with the extra spices, and sugar. I am kind of cheating, cause that is the cake I gave everyone to taste.

Flavor: 9/10 (several people marked it down as they didn't like the taste of the dark beer)

Moistness: 9/10 - I thought personally that it was a 10, cake just does not get much more moist than this.

Texture: 8.8 / 10 - Again, I gave it a 10. Chewy and dense with a lovely crumb. Would very easily hold up to fondant, which is something I always look for.

Ease of recipe: Not bad, no mix master involved, just a whisk, but boiling and cooling the beer and molasses, and measuring wet and dry into different bowls made one pan and two bowls to clean up.

Cost: If you have to buy Guinness just for the cake, it is kind of expensive. I can't remember exactly how much it was, around 12 - 14 dollars for a 4 pack I think.

Cupcakes: Good - no dome, moist.

I am adding this to my recipe book as a keeper. It really is more of a gingerbread than a spice cake, but the chewiness and the depth of flavor are something special.

Adding some more comments about the pumpkin spice cake in my review above. My total for this recipe would be a 9.
As an option to this recipe you can add 3/4 cups of dried fruits (raisins, cranberries or crystallized ginger would all be good).
Can't wait to try the other one.

After three tries of Spice Cake #2 I am now ready for my review.
1. For flavor I give it 8.5. It's not at all a bad flavor, but it is a little milder version of a spice cake.
2. It had a light texture but was very crumbly because...
3. ... it was too dry. This is the reason I baked it three times before posting; to make sure that it was the recipe that was too dry and not me. The recipe calls for cake flour (2 1/2 cups) and since I use a scale I measured it to 250 grams of cake flour. I took one out when a toothpick comes out clean, one when a tooth pick comes out with a few moist crumbs on it but they all ended in the same result. Too dry.
4. It was a very easy recipe.
5. Cost was normal.
6. Cupcakes went ok. Did not get as nice dome as the pumpkin spice cake I tried, so I would give it a 7 for cup cakes. (But they were dry any way)

After reading the great reviews of the food network (Emeril) buttermilk spice cake recipe I had to try it. It was wonderful. These reviews are so helpful!

great pics adavag thanks for the review too. i know it looks likes emerils recipe is really good think im gunna bake some of those up this week!. even if you didnt sign up for it but baked it you can still do a review. all the extra info helps!


also getting ready to start next months thread so what flavor do you all want to do?

ive narrowed it down to white cake, carrot cake, cheesecake and white chocolate cake so please vote outta those and ill get the thread started!!!!!

yes please list in order of your favorite to least favorite. i narrowed it down based on comments i got last time i asked. Im going to hopefully chose a flavor by monday so that will give us a week to submit recipes aand whatnot. also if anyone wants to be tabulator for the scores this month please let me know. if no one volunteers i can do it but sure would welcome the help lol. anyways happy baking!!!

I don't know the criteria for voting, but if it is open to anyone, I'd like to vote for white cake, carrot, white chocolate, cheesecake. I didn't participate this time, but did participate in the chocolate and yellow scratch offs. Two boys in football makes Sept and Oct too hectic for much of anything else. I did follow this one with great interest and ended up baking the Buttermilk Spice Cake from Emeril late one night on a whim. I'll say I agree with the reviews except next time I will add about 50 percent more of each spice. Loved the flavor, just wanted more of it.

i too have been following this thread and baked emeril's even tho i didn't register. my feeling is the same as vicki's that it is really good but a bit too light on the spice flavor. i have been slammed with orders (and this will continue to the end of the year) so i wasn't even sure i'd be able to bake one until a customer ordered spice icon_smile.gif just thought i'd add my 1 1/2 cents in.

Sorry everyone I know I've been mia for a bit. I can pretty much say emeril won hands down bit I will still tabulate all the scores for a side by side look as well as a second and third place vote. So it looks like its gunna be white cake unless we get any last minute votes for white chocolate. White cake is good tho its a nice staple cake for weddings and what not. Thanks for participating everyone! Hope ur all having a great halloween!

As for the next cake, gosh both sound like something I could use a good recipe for. Holidays are coming, wanna do both cakes? (& possibly even extend it). HEY, technically white choc cake is white cake, ha ha!!!! (I know, I know....not the same)

daltonmom- lol love your idea but i think for the purposes of finding the best recipe limiting it to just one would probably work best. im kind of thinking white this month and maybe white choc next month? i always figure too once you have good staple recipes it isnt to hard to alter them to a different flavor such as turning a yellow cake into lemon. and yes i will definitly add a link to the new thread!!!
