I'm looking at a recipe for jamaican fruit cake. It says, for best results, soak the fruit for 21 days. I don't want to wait that long. It also says, for another option, boil the fruit in red wine. Doesn't say what kind of "red" wine. Any suggestions? Has anyone made Sharon's Jamaican Fruit Cake or anything like it? I really need to know what kind of red wind to use. There's so many.
