I actually baked a cake once in an electric roaster. They do function as an oven, and it turned out fine. I had an old model at the time and it had a large rack for the bottom. I pre-heated it, and put the cake in.

Worked great!

I don't know if you live in town or country but how well do you know your neighbors? You could ask if you could prepare everything at your house and bake it at your neighbors. Maybe when you get your oven bake them a cake as a thank you. Just an idea : )

When I lived with my parents, my mom made me bake everything in one of those little toaster/convection ovens. The biggest pan I could fit in there was a 9" square. It baked all right, not the best, but I used it for everything from pies to cookies to cakes.

The idea about asking your neighbor or a nearby relative if you can bake the cake in their oven is probably your best bet.

Why?? Was she a neat-freak about her oven?? I can't imagine limiting a creative spirit like that...

I have baked cakes in my roaster as well and it turned out just fine. I do know that my aunt has baked pie in their gas grill also and I believe it may work for a cake as well. Preheat to the temp you need and keep the lid closed to maintain the temp.

My aunt used to bake without any kind of oven. She would fill the bottom of a large heavy pot with small (washed) stones and place it on her gas stove. When everything is heated through she would carefully place the cake pan on the stones, put the lid on and wait for it to be done. She even opened it a few times to check with a toothpick for done-ness. This method however is kind of impractical because you can't really set a specific temperature.

Even though my aunt owns an oven now, she still bakes her cake on the stove because it tastes better that way. It is by far one of the most delicious cakes I have ever eaten.

I've seen lots of recipes for crockpot cakes. I've never tried one, but everything else cooked in a slow cooker is always delicious!
