Who Uses Powdered Egg Whites In Their Imbc?

I have a wedding coming up where there will be pregnant women and children, but they want IMBC .

I don't feel comfortable using raw egg whites, so I was going to go the powdered route. Can you successfully use powdered whites to make IMBC? Where do you purchase it? Wilton is expensive and they add other stuff in with the whites that I'm afraid may affect the taste or texture of the icing.

Hi Annie,
I think Leah_S may use powdered egg whites. You could PM her. I recall that someone else does/has, but I don't remember who it is.

I use powdered egg whites for my smbc. It behaves and tastes exactly the same. It just takes a few minutes for it to reconstitute in the warm water you add to it. I love it because I dont waste yellows (in cases where I am not making a bunch of yellow cake) and I dont have to spend the time seperating eggs) And of course I can be dead sure it has no salmonella icon_smile.gif

Just curious, do you get your whites in the grocery store or do you order them from somewhere?

I also use powdered eggwhites in my SMBC. I buy them in my supermarket (Deb El, comes in a can a little narrower than a soup can, my store has them in the baking section). You can also purchase cartons of liquid pasturized egg whites in the refrigerator section of some supermarkets. I can get them at my Sams Club. Both are safe and both work well.

I too use deb el although I will be ordering a large container from honeyville this week since it is cheaper in the long run and I am swamped september and october. Kroger is where I get the deb el ones

I will try to look for those in the grocery store. They closed our Kroger a long time ago. icon_sad.gif I really liked that store!

Do you basically just follow the directions for reconstituting the egg whites and then follow the icing recipe as written?

Yes Annie, Just follow the directions on the container and reconstitute the amount of whites needed, really simple...just wisk warm water and the egg powder. Then proceed with your BC recipe.
