I make caramel apples every year for Christmas and after many years and many different apples-- I love the Fuji! Tart- but not as tart as the Granny Smith. It's not mealy like the McIntosh. It's juicy and delish!

Fugi are my favorite apples as well but with caramel, granny smith all the way! I love to the whole apple in caramel, then white chocolate and roll in cinnamon and sugar tastes like apple pie, yum!

It is soooooo good! Others I have tried that are yummy too :
Caramel apple dipped in tiger butter (1 lb white choc. 12 oz peanut butter 12 oz semisweet choc, melted) roll in snickers

Caramel apple rolled in reese's pieces

caramel apple rolled in crushed heath bars and drizzled with milk chocolate

There are so many different ways to make these yummy, I want to try caramel apple dipped in white chocolate and rolled in crushed oreos! There is a local candy shoppe that does this icon_smile.gif

When I took a gourmet apple class a couple of years ago, the "Apple Pie Apple" was one of the apples that we made. A lot of people loved it.

I also vote for Granny Smith. I love the contrast of the sweet caramel (plus any other amazing things you guys have mentioned!) with the tartness of the Granny Smith. I usually only make these around Halloween, but I may have to start early this year!
