The recipe I have calls for 16 oz. marshmallows, 2 tablespoons of water, and a 2 lb pound bag of powdered sugar, but it says not to use it all. You use 1/2 the pack to start with then add as needed.

How much sugar do you normally use when you make MMF? The last time I did it I think I added too much sugar and I want it to be better this time. I've made sme and it seems I've used about 5 1/2 to 6 cups and it's starting to look good. I don't want to add too little or too much sugar, so what is the approximate amount you normally add?

I usually use all of the 2lb bag with the exception of about 1-1.5 cups left.. hth..

I think i usually end up using 6-7 cups. I have never used a whole bag. I do think it has something to do with heat and humidity tho. It is realy dry where I live.

I pretty much use the whole bag of powdered sugar when I make my MMF. I very rarely have a problem with it. I use my stand mixer and dough hook and just let it work itself together. icon_biggrin.gif

I use the whole bag of sugar and add water if needed at the end.

I buy my sugar in the 50 lbs bag so I never measure. Maybe just kneeding it in till it feels correct would be a better way. ??
I can tell a difference with a lot of things due to different weather throughout the year. If I measured everything then I would have some months where things didn't go well.
This is also a great method because when making frostings and filling I get to taste it frequently icon_smile.gif

I usually end up with approx 1 cup of ps left over at the end, depending on the humidity. My recipe, however, calls for 2 tablspns water and 8oz marshmallow. After I get all the ps incorporated, I keep kneading for about a minute to see if it gets sticky again, then add ps as needed. HTH!
