I was asked by a friend to do a baseball field with a logo type thing on it for a cake-

I said yes, no problem.

Now she is asking if I can do a cupcake cake-

I told her "I can do a cupcake cake- But its real hard to get the shape that you need/want- and traveling with it will cause it to break apart and skew the design. Plus, the logo on it will not sit quite right and will really not look professional. "

And she asked about whipped icing instead of buttercream. I am not real familier with whipped- is it heat steady? Its HOT here, and HUMID. I have to make grass- and a fondant emblem. plus pipe on lines and basepaths.

I told her I could flavor BC with caramel, or almond- what else can I say. I really hate to use something new on a cake that is going to someone else. and I really dont want to do a cupcake cake- at all.

Do not use whipped icing if you are using fondant at all!!!! It will basically dissolve the fondant emblem. If you want to use fondant, stick with buttercream.
