I completed a cake for my great-nephew's 3rd birthday. It is much more amateurish than I'd hoped. I have had the baseball cap drying for a week, as well as the baseball bat. It isn't dreadful, but neither is it particularly good. At least I know it'll taste good.
It makes me wonder WHY I'm doing this - with cake in the house, I eat it, which is DREADFUL!!! And I'm too new for my cakes to be really nice. OK, now I'll stop whining....
You'll get the hang of it, everyone starts some place and it's not on top. It just takes a lot of pracitce and then more practice. To help get rid of excess cake I take it to my place of work, send it with my husband for him to take to work and also send it with my parents to take places. I get rid of it any way I can

I have finally learned to immediately put my cake scraps far down in the trashcan or garbage disposal... don't want them around my house and everyone at work is dieting so I don't want to get them off track either.
I have many times wondered why I'm doing this... it certainly isn't for the money. I love to be a part of people's celebrations even if I'm not there. You really do get better with practice but it is really frustrating at times.

I just looked at your pictures...you are doing this because you're good at it! Give yourself a break, you are still new at this and it takes tons of practice and experience. I made the most horrible cake yesterday...I won't even post a picture of in the Cake Disasters gallery 
. Not all of our cakes are going to be what we want them to be but you definitely have talent.
I am in the same boat! But I try to see all the mistakes as part of the fun because it teaches me to do a better job. And part of the fun of cake decorating is getting to try new things and figure things out. There are always so many more things to try and to master. The practice can be frustrating, though, for sure. It can be stressful to try to do things and not have them turn out as you envisioned. As for the practice cakes, I have offered some to a few close friends who like cake. That way, I don't have to feel bad about throwing cake away (I really hate throwing food of any kind away!!) but my waistline doesn't expand along with my skills! I also love this site for showing very experienced and amazingly talented cake artists as well as beginners. We get to see where practice and learning can take us! Good luck and keep at it!!

Whenever I ask myself this question (which usually happens at 2 in the morning when I have to be at work by 5 and the cake is "due" shortly after I get home from work at 2), I do two things... 1. take a deep breath, and 2. look at the pictures of my previous projects to see how far I've come. There's one picture in particular of my cousin's son sitting with his Spongebob cake on the kitchen counter that does it for me... he sat there for almost an hour before we finally convinced him to go outside to play with his friends. THAT's why I do this.
As for left overs, in the trash they go. I have to toss them or my boyfriend will pick his way through the scraps bite by bite and then moan that his stomach hurts and he doesn't know why. I myself have found that the more I play with sugar, the less I crave it... odd, but I'm not complaining!
