Dear Satin Ice,
I'm sorry to say this, but I just don't love you anymore. You're not the same smooth, flexible, delicious stuff of wonder that you used to be. I don't know what happened to you; you've changed into this dry, cracked mess. I've tried to change you- greasing you up with Crisco, rubbing you down with glycerine, heating you up the microwave- nothing will fix you.
We're through, Satin Ice. Don't call me. I've already gone to Wilton, and it was so much better than you.
Sincerely,
BosCakes
I love tht dear john , letter, BosCakes. lol I don,t like satin ice either. I do like pettinice.
Wilton? Really?
That's what I was thinking!
I make my own using Michelle Fosters Recipe and absolutely LOVE it! I sometimes mix in some melted white Chocolate.
It is easy to work with and tastes sooo much better than premade. (well any of the premade I have tried)
The 2 other cake makers in my town use premade fondant and everyone that has had mine and theirs prefer mine....
I was actually pleasantly suprised by Wilton last week. I had to do a zebra striped cake, and the thought of trying to get homemade fondant black was giving me nightmares, so I bought black Wilton since I just needed accent pieces. My kids kept going after my scraps eating it, so I thought I'd tasted it just to see how awful it was....but it wasn't awful.
It was fantastic to work with, and it tasted pretty good. Definitely better than I remember it tasting years ago.
Maybe the new competition from Duff stuff in the Michael's stores is helping them improve??!?!!?!?
I should right a letter to Choco-pan....I'm not using that anymore. I was using it today for some accent pieces and I hated it...too soft, kept ripping on me. I was disgusted.
Try Fondarific. It works great! The only thing is that it doesn't dry hard, which is great for cakes, but not for things like bows or need to be dried. They don't dry even with quite a bit of tylose or gumtex added. I've decided to keep another (less expensive) fondant on hand for items I want to dry but don't want to use gumpaste.
I've never heard of PettinIce..I'll have to look for that.
Normally I would never use Wilton for anything other than a practice cake because I hate the taste, but I'm in the middle of doing a cake and I happened to have some unopened in my pantry. Three cakes in a row Satin Ice has been total crap...accent pieces are mostly fine, but forget about a smooth finish on the cake.
I bought all the ingredients last week to try Michelle Foster's fondant, I just haven't gotten around to trying it out. If I wasn't pressed for time tonight, I would have! This all motivates me to make my own, to make something that tastes great and works extremely well!!!
mhmm, I bought Duff black the other day and Wilton white because it was cheaper and I was only using it for "pearls" on the cake and I thought well they wont be eaten! BUT I tried the Duff stuff and it tasted good, and then my 15 month old grabbed one of the pearls off of my plate while we were eating the cake at the party and he ate it and asked for more! So I tried it and WOW, doesn't taste like Wilton fondant at all, so much better! We ate the rest of the pearls together... call me crazy ;]
There have been many recent reports of W fondant tasting much better.
I need to do some dummy cakes anyway. Going to get some tomorrow!
Is Duff's fondant really from Fondarific? I bought a container of the "white" buttercream fondant last week expecting great things...meh. It was far too sweet for me. I ended up using half of it with some Satin Ice for the last cake I did when the SI alone wasn't doing it. (I've learned my lesson!)
And you're right, leah_s, it's expensive, even with the coupon.
Even more reason to make my own....number one on my to-do list!
Dear ,
We're through, . Don't call me. I've already gone to Wilton, and it was so much better than you.
Sincerely,
BosCakes
LOL - amen to that. And I, too, like Wilton better than S a t i n I C E. How many of us ever thought we'd hear/say that???
Wilton tastes pretty good now! And I agree that satin ice has changed, and not for the better.
MMF all the way !!! I love that stuff.
it just took me a couple dozen batches to get it right.
I just got a new bucket of Satin Ice, and maybe i'm wrong, but it's seems stretcher or something. I used it on two cakes (they both had to take a lot of color--so I just figured the added food color did it) but maybe they did change it.
leah please let us know what you think of the wilton fondant. I've used it before and have gotten mixed reactions. My sister loves it so much she waits for scraps as i make the cake to get some fondant. I don't think it's bad at all. My mom wont go near it!!!
Darn! Just when I thought I should try some of this.
I am a hobby baker and so Wilton it is. I had to get some Wilton fondant for my class. My DD and I tentative tasted it. After the last time we tried using it, we weren't to eager to do that. And surprisingly, it did taste good.
But not the next day when the gum paste/fondant combo dried. But I knew that ahead of time. It didn't stop us though. That curiosity thing crept up on us!
Wilton does taste a little better now. It would probably taste even better with a little flavoring added. I just bought some to remake a loop bow (the 1st bow flopped b/c it was made from Fondarific mixed with tylose). I'm not convinced yet to make edible decor or cover a cake with Wilton, but it is so easy to work with.
You may want to try Fondyx. It tastes pretty good, it's cheap, and you can make decor with it.
I've never heard of PettinIce either. I may have to give it a try.
This is such disappointing news! The Satin Ice I'm getting here in Mexico is still very nice, but I'm sure that's because the distributor here has a lot of the older fondant in stock. I guess I'll just have to sit back and worry about when I'm going to get some that's unworkable. On the other hand, the news about the Wilton fondant tasting better is great. But that will take a while to get here, too! Considering the amount of fondant I use, I'd hate to go back to making my own, but it may just be "Michele Foster, here I come" for me.
I am not happy at all with Satin Ice lately. It is a cracking mess! I am going to have to find a place that sells Pettinice I guess.
Oh, wow, I am so glad that I read this. I had bought Satin Ice because that was one that was being recommended a lot (I haven't really done a lot of fondant work in the past). I was having a lot of trouble with it and cracking was the main problem. I just kept thinking that it had to be something I was doing wrong, because I thought everyone else had such good luck with it. I feel so much better now, I mean it's too bad about the Satin Ice, but maybe I'm not as 'fondant challenged' as I thought.
kaseyrconnect, i thought it was me at first, too!! i've used satin ice for a little while, had no trouble, then didn't do a fondant cake for a couple months..then when I used it again, I though my skills were gone!! I was nervous bringing it back to the supplier, but I can't throw my money in the trash. That's when I found out I wasn't the only one having trouble. I just brought back my bucket of SI today; didn't even have to say anything and I got my money back! Satin Ice you'd better figure out what's wrong!
Wilton tastes pretty good now! And I agree that has changed, and not for the better.
I've never gotten Satin Ice to cooperate with me. I too like Fondarific but ouch, it gets expensive sometimes. Especially since I don't charge for cakes and have to get it shipped to me.
Not wanting to hijack this thread, but was wondering: Sharon, what brand of fondant are you using in the Flawless Fondant DVD? I just watched that this morning and was curious. Thanks!

I think it was Satin ice, might have been Pettinice, but that was filmed 2 years ago.... would not use it now....
Thanks for writing this. My husband and I were on the verge of divorce a couple weeks ago as we tried for HOURS to cover a cake with satin ice. We have never had issues like that so we were both stressed out and it was awful. I have tried using fondarific before but it didn't work out very well because I was trying to make a 3d design and it just flopped, but I think I am going to try to cover an entire cake with it.

You should call them! They would be able to give you some tips. Their shop/manufacturing warehouse is just minutes from me. If you call you will almost definitely get one of the owners if not Linda the creator ) I do have problems using it for accent pieces, i'll either put it in the fridge for 5 mins for it to firm up or mix it with a different brand.
I love Massa but it is pricey. However it tastes great and works like a charm.
That's why I use too but mostly because that or Wilton is all I can get locally. Everything else needs to be ordered from the mainland for me.
I actually wrote Satin Ice, telling them about how disappointed I was with their product after using it for several faithful years...and also requesting a small sample of their new buttercream flavored kind, to see if it worked better...they never responded.
