Unmolding Candy Melts From Wilton Cross Pan?

I'm trying to pull off this cake:

but every time I try to unmold the cross it cracks. Any suggestions on how I can get this out without cracking it? Thanks!

Is the chocolate thick enough? Have you tried freezing it for a couple of minutes?

I'm pretty sure it's thick enough, but I haven't tried freezing it. I'll try that now, thanks!

*sigh* 3 more attempts, 3 more breaks all in the same place, right below the cross piece on the cross. I may just go buy a cross cake topper instead of fighting this.

I realize I'm late to the party here, but, do you think it was cracking because it had to "fall" a couple of inches from the pan to your work surface? I usually unmold fragile pieces onto a thick piece of foam sponge. For this cross, it may be necessary to cut a piece of foam to fit inside the pan so when you flip it over, the chocolate doesn't fall.

For foam sponge, I buy chair cushion fillers at the fabric store.

Diane,

That may have been part of the problem, but what I found to truly be the challenge was the candy wasn't releasing from the sides of the metal pan. I eventually used wax paper as a pan liner, but because of the bevel in the cross this proved difficult to get the wax paper flat. The cross came out, but had some imperfections in it, so I just dubbed it the old rugged cross and went with it!

Sorry to post so late... but I would have used a lite coating of spray on the pan. Then I wonder if you allowed it to chill long enough to harden. Just thinking out loud.

Probably should have tried the spray, but damnit if I'm not a hard head. I'm fairly certain I let it set long enough though.

The cake and cross are beautiful. I've never tried non-stick spray, but it sounds like a good idea.
