I am wondering if you can use the gel colors to color the crusted cream cheese icing to be used in decorating a cake ?

Yes, you can use them just like you would on regular buttercream.

I am making a wedding kake for the end of June and I live in Florida with high humidity. Can you tell me how to make a crusted cream cheese frosting.

Here is my recipe. You might want to try it first. It's pretty humid here and hot in Oklahoma and this has always worked well...but like I said, you might want to try it first. I will say this...it's better that the venue be indoors with this BC. It won't hold up very well outside for very long if it's hot.

8 ounces real butter (salted)
8 ounces cream cheese
2 lbs powdered sugar

Cream butter and cream cheese and slowly add powdered sugar. It's a great crusting BC. I layer on frosting and add colored BC last.
I keep the cake in the refrigerator until delivery time...and I always deliver at least an hour prior to the event.

Thanks carmijok - I will have to try that recipe myself icon_smile.gif The crusting cream cheese recipe I had totally sucked and I won't be using it again! Can't remember where I got the recipe from but it totally had alot more ingredients than yours and it was so thin and I couldn't get it to thicken up at all and by the time I tried to use it - the cream cheese taste was gone. Will def try your recipe icon_smile.gif!!
