Modeling Chocolate

I've never worked with modeling chocolate before or have made molded chocolate candies. I have a cake coming up where I might need to do both. Do you have any recipes for modeling chocolate (chocolate & white) - also, what do you use to paint white modeling chocolate - I have used gel food colors to paint fondant mixed with tylose powder before, but read that the gels don't work for chocolate.

What type (semi sweet? etc?) of chocolate (chocolate and white) works best for the modeling chocolate and molds? I don't need anything fancy, just something that tastes good and I have never tempered chocolate before.

I have been researching online, but there are so many links/ideas out there and I wanted to hear what others use.

This is the recipe I use and it works great....10oz chocolate & 1/3 cup light corn syrup . Melt chocolate in microwave at 25 second intervals stirring between until smooth, fold in corn syrup once it turns into a ball spread it out on a cookie sheet and let sit for 2 hrs then divide into sections wrap in plastic wrap and store in the fridge. Also the best way to color it is with powered food coloringicon_smile.gif

Question on this recipe. I used it but I melted the chocolates on a double boiler on the stove and it did not turn out right. It wouldn't harden like it should have. Do you think this was from using the stove instead of the microwave? Thanks.

What exactly do you mean by "harden" It does not get hard until it sets in the fridge overnight, it is very soft until then. Did you refrigerate it and it was still soft??

Not to steer this post in another direction but, if you use white chocolate, I know it is not actually chocolate, and do not want to color it how or what do you use to paint on it? I want to do something that need to be basically white, off white and then paint the item. Thanks so much for your help. thumbs_up.gifthumbs_up.gif
