How Far In Advance Can I Make This Cake?

I have two very detailed fondant-covered wedding cakes to do in one weekend this August. I usually only do one wedding cake per weekend, but I met with two brides who gave me their wedding dates and didn't book right away. I thought both were going to go with another baker since I didn't hear back from them in a while, and then of course they both booked within a few days of one another. Both cakes are fondant with no perishable fillings (no fruit) and I'd like to make them ahead and decorate them at the end of the week. I usually make my Saturday wedding cakes on Friday, start to finish. I'm just kind of uneasy about making them in advance. I know lots of people do with great results. I'm just unsure of a timeline. I don't want to freeze them (haven't had good luck defrosting fondant cakes in the past) but can refrigerate them. Any advice you can give would be great. Thanks!

Fondant will make your cake last longer. It seals it. I did a wedding cake for my son and I had to do it in advance because we traveled to the wedding. So I baked on one day, did the fondant and decorating the next, traveled to the destination the next, and they sat in my RV for another day until the wedding. So it and the grooms cake got served 5 days after I baked them and they were great.

I do like to freeze my cakes too. I just put the filling in and stack then cover with a multitude of plastic wrap then foil. When ready to use I let them defrost completely! No moisture on outside at all, then I do my buttercream or fondant.

You can certainly freeze the cake part. I curious how you do a cake from beginning to end ( baking to finish) in one day. Settling alone can take 3 - 12 hours.

Leah, I usually do them all on Friday. I work a long day on Friday, though. I usually start at 8:00 a.m. and then work until about 5:00 a.m. on Saturday morning. So, there's plenty of time for settling. I do my other cakes around the tiered cake, giving it time to settle, time for icing to set up, flowers to dry, etc. I don't do a whole lot of tiered cakes, but they've all worked out this way. I just like to limit myself because I have other cakes to do and other responsibilities at the bakery.

I'm going to hijack for a minute and ask my own question in here since essentially the same icon_smile.gif

I have been asked to make a cake for a Sunday birthday party on the ONLY weekend I'm going away this summer. (Hubby will divorce me if I cancel since our *couple* time lol ) If I bake Thurs night, and then decorate Friday before I leave will the cake be okay? It's a single layer round cake so no filling (going to look like a large pizza). It will most likely be buttercream with fondant accents.
