Tweaking Buttercream Recipes

I have always used Indydebi's BC recipe with Sweetex and everyone LOVES it. It's creamy and not too sweet; lots of people tell me that they love my icing and they don't normally like icing.

I'm not trying to fix something that isn't broken, BUT I just had to see what all the fuss was about over Sugarshack's BC and have been hesitant to try it b/c it makes soooo much. I tried it this weekend for the first time and it came out GREAT! It is so smooth and easy to work with, but it is just way too sweet and I taste the shortening. How can I tweak this - Should I add salt? What about using milk instead of water?

Is it possible to have the smoothness of Sugarshack with the creamy not so sweet taste of Indydebi's BC? It would be the perfect BC! Any suggestions would be great. I'm eager to give it another try but don't want to waste 6 lbs of sugar and all that Sweetex for trial and error... TIA

I also use Indydebi's receipe and I've made a couple of changes that seem to make it a little smoother. First I beat my shortening for 10-15 minutes before adding any other ingredients. Second I use half and half in place of the milk and I heat it before adding. I also use heavy whipping cream (also heated) but if I need the icing to be white I use the half and half. Cream makes it a little off-white. Beat shortening and heat the cream. Try it and see if it isn't a little smoother. thumbs_up.gif
