My absolute favorite cut out cookie is Cream Cheese Sugar Cookies. Here's the recipe I use:

1 cup white sugar
1 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 egg yolk
2 1/4 cups all-purpose flour

How can I make them chocolate? Add cocoa powder? Melted chocoalte? How much?
