Fondant Cake - Leave Out Or Refrigerate?

hi !

I am going to make a cake covered in fondant - i need it for saturday but will probably make it on thurs or fri. Should I leave it out or refrigerate it?

I have found that a fondant cake does just fine left out - but covered. I have never had a problem that way, but depending on the humidity in your area, it can sweat and cause probs after it's refrigerated. The fondant makes a wonderful seal that keeps the cake fresh and moist.

I agree, unless there's a perishable filling that needs to be refrigerated. I personally try to avoid putting perishable fillings in fondant-covered cakes, just because of this.

Unless it has a perishable filling I don't see any need to refrigerate.
