So, I have to post this because this is about the ONLY place I can talk about this stuff so here goes....
This week I had 5 cakes due plus 4 dozen cupcakes - all due Saturday. I started baking on Monday and Tuesday, froze everything, got icings ready on Wednesday, made templates and make-ahead decos on Thursday, decorated all day Friday.
I go to bed Friday night thinking I am doing GREAT! Saturday morning - one client for birthday cake calls up rattled about her party cause so many people are coming, just doubling checking to make sure I'm still delivering at said time to said place. I reassure her that the cake is done, looks great and will be there in plenty of time for her party....and at her last statement she says, "And I'm so glad I decided to go with the bigger cake".
I hang up, thinking yeah....bigger cake eh...., then it sort of dawns on me that I don't remember baking a larger cake...hmm...go check order sheet - order sheet says 11x15, but I baked and decorated a 9x13! I look at the clock - 9:00a.m. - still have to fill and frost 4 dozen cupcakes - and now, bake, cool, ice, decorate a cake - before 12 because that is when I have to start deliveries!
I am proud to say I made it happen (done before 11:30) - but I am telling you I will NEVER let this happen again and I now know to always DOUBLE check the order sheet BEFORE I start baking!!!!
Way to go!! I bet getting it all done in time was SUCH a relief

Well done! I also like your list of to do's! Thank-you for the reminder on the double check, always a good idea! I hate those panicky feelings.
Thanks - the list was so appropriate today! HA! I did survive all that and the deliveries, I'm not so sure my poor second kitchen survived....I haven't been down there yet....I'm being bad and leaving it til tomorrow - I'm sure it looks like a powder-sugar tornado went through there!
Whew, I am so glad that you pulled it off! My heart started racing just reading your post. I cant imagine what you were thinking. The kitchen will be there tomorrow, enjoy your night!
congrats on the save !! I think I had a nervous break down for you while reading your post !! whew.. talk about stress filled day. sorry that happend, glad you survived.
You know I think in a way it was good for me...it will force me to be better by double checking order sheets, but also it showed me that I can do cakes fast and furious if I have to and it still looked good when I was done - I showed my husband the two photos and he couldn't tell the difference. Although, we are eating Elmo cake all week now!!!
glad that it all worked out for you!! I always make a check list for each cake that I do and tape it to my cabinets as cross off once each task is accomplished!
Oh gosh.....I hate that feeling you get when you KNOW you messed up and are thinking how in the H*** am I going to fix this! I forgot a smash cake for this weekend, I was lucky though...already had a spare 4" cake cooked ......whew!
It's a lesson we all learn the hard way sometimes
I did the same thing this weekend with a cake order. I made a 1/2 sheet cake and cookie bouquet for a shower. The flavor was suppose to be marble w/almond-vanilla BC. Well I kept thinking all day that it's French Vanilla w/vanilla BC so that is what I made. Cake/Cookies were picked up and she loved how it looked. My sister happened to be one of the guests and said that the flavor wasn't what she ordered. I looked back at my order book and I mixed up two orders :::slapping forehead::: I have never made this mistake before. I emailed her and apologized. She said not to worry about it, because the cake was a hit and tasted delicious. So it all worked out in the end, thank goodness.
But now, I will ALWAYS double check before I bake!

You certainly do learn from your mistakes and I bet you won't do that again! I had an absolute heart stopper recently. Long story short our personal holiday plans changed by a week due to an unexpected relative visiting from overseas. I had been out all morning and whilst packing to go to our destination 4hours away noticed the answerphone flashing (this was on a Tuesday). The messge was from a bride saying she wanted to drop the matching ribbon off for her cake and when would be a good time? I just dropped to the ground with panic as her wedding was on the Saturday and I had overlooked her order in the chaos that was our personal life.
Upshot, the family went away without me. I stayed up until the wee hours baking three different flavoured cakes for the three tiers. Spent the next day icing and decorating - drove the cake to my parents who had agreed to deliver and set up for me at the wedding venue. I jumped on a bus two days later and met my family on holiday!
The best bit ... when talking to the bride I asked how everything was going and she said 'really well, I just keep waiting for something to go wrong!' ...... oh if only she knew how close it was!!!!!!!!
Wow - thanks for the stories, its good to know that I'm not alone in this! It is a job and just like any job, you make mistakes sometimes and have brainfarts. But I like Karen's idea with the checklist - good call. And sweetooth - Nice save!!! That stinks you didn't get to go on the vacation though!
