Seventy Two Tier Mini Cakes... Help!

In October I'm making 70 mini two tier cakes and transporting them to Vail. They'll be 5" and 3" iced in buttercream. How do I A)keep from losing my mind and B)keep them from shifting during the drive and mucking the icing as I have to take them all assembled.

I would put each one on its own little board, then put a layer of nonskid drawer liner in a box and set them on that. Put a piece of drawer liner down in the car before you put the box (or boxes, it will probably take a couple icon_biggrin.gif) in the car, so the box itself doesn't shift during the drive.

How to keep from losing your mind, well, I think we're WAY passed that. I think you lost your mind when you agreed to the order. Ha ha! But, hey, go bog or go home! You are already my hero. thumbs_up.gif As for keeping them from shifting around, I think Texas_Rose has nailed it with the non-slip drawer liner. Good luck! Be sure to post pictures of all of those little cakes when you get them finished. It will be AWESOME!

Maybe start baking them a week or so in advance and freeze them. then all you will have to do the week they are due is decorate and stack. at least then 1 big job will be done and help to keep you sane!

Preplanning is the way to go..........making a list would the first.....amount of ingredients.....number of boards needed......plan on when u will make the cakes and when u can ice them....... how many days u will need and how to store or allocate a space for them while u r working on them........once u have it all planned and ready...... u will be ok...... best of luck

Do as much prep work as far in advance and store it away as you can making an covering boards, making ready icing bags ready to be filled,plan decorating anpre make and store if it applys to you style.... good luck an have fun
