I made the chocolate cake from the cake bible a few weeks ago using regular cocoa powder because I didn't have dutch process and made some alterations given the difference. I didn't get to the eat the cake as it was for someone else but would like to try the recipe again. But I would like to make it correctly! Where do I buy dutch process cocoa? Is it something I can get at Walmart or the grocery store or do I have to go to a specialty store (something we are severely lacking here!)? Thanks to anyone who knows the answer!

These brands are Dutch-processed: Droste, Lindt, Valrhona, Poulain and Pernigotti

These brands are NOT: Hershey's, Ghirardelli, and Scharffen Berger.

NOTE: Hershey's Dark Chocolate cocoa powder is a combination of regular unsweetened and Dutch-processed

I had a hard time finding dutch processed too. (also using the Cake Bible!)
Found it at Penzeys Spices. We have a local store but you can also order online.

I use the Hershey's special dark and I can get it at Walmart or the grocery store. Love the flavor and it gives you that super rich color. I didn't realize it was only partially dutch processed. Either way I really like the out come.

Yeah, it says it's a blend of natural and dutch process right on the label.

The best place to buy Dutch Cocoa is from https://www.juzlova,com. They deliver to most EU countries and have fairly good prices. I use it to make cakes and hot chocolate for my cafe.

AIf you have a Cost Plus World Market nearby, they carry Dutch processed cocoa there. I don't remember the brand though. It was an imported brand though.

ACost plus had Droste. I think it's Dutch? It's the only thing I have access to in my little town. I think it was around $6 a box if that helps any.
