Oh No!! I Made The Cake A Week Early!! Help!

OMG, I received my largest cake request ever on Monday. A three tier gift box cake for Friday. Not much time considering I work full time and go to college half time. But I took the order because I can use all the practice I can get, and its for a friend. Well, I could have sworn she told me to deliver it to her on Friday, January 19, 2007. I meant to verify it in email.. but i forgot, I only verified flavors, color, and design.

So today I emailed her today to let her know some info about the new fondant I tried.. and its a good thing I emailed her.. because the party is actually NEXT Friday! Oh No!!!! :'-(

The question is, will my cake last?? I baked chocolate cake, and white almond sour cream cakes on Sunday January 14, 2007. They are doctored cake mix cakes. I did not freeze them because I was using them right away. Now they are cut to shape and frosted in the wilton buttercream (i.e. no butter or milk). And the largest tier has that Fluff marshmallow fondant on it.

Please help! What do I do? Freeze/fridge? Wrap in plastic wrap? keep or loose the fondant?

Thank you for any and all help!

On the bright side, I can go to sleep tonight and I'm sure I'll never make this error again. :-/

Okay, pop the cakes individually in the freezer until completely frozen. Then wrap tightly with saran wrap to protect it from freezer burn. It will store for a week just fine. Not too sure about the fondant.

Cakes can freeze safely up to three months. Anything after that is a poor quality cake and loses its flavor.

When thawing remove the saran wrap immediately so your piping isn't ruined.

At least you are ahead of the game now, right? icon_smile.gif
