Hi:
I need to do 50 cupcakes. How should day be stored for a day or two? Should they be refrigerated, left out, fully covered? I have left cupcakes out and buttercream becomes very crusty!

If you have a filling or frosting that requires refrigeration, then refrigerate. If not, other cakers report that refrigerating dries cakes out. So you could freeze if you have room or leave them out and lightly covered. Some use a light kitchen towel over the container or leave the storage container open a crack. If you have them tightly covered they get kind of moist. Denette
