Hello!
I am making a cake for this weekend. The cake will be carrot cake and i have heard cream cheese icing goes very well with carrot cake. But i was wondering is cream cheese icing white? or does it have a yellow tint to it because of the butter? If it does can i use the wilton White-White to make it whiter?
Also, would i be able to use the same cream cheese icing to make a border on the cake? or would the icing be too thin/thick?
I have only used butter cream in the past!!

Thanks for all the help!!

Meg

Hi Meg,
The cream cheese frosting will probably be ivory. Mine is, with all of the butter in it. I haven't tried using the white food coloring. And I have used the cream cheese frosting for the borders too. I don't use the frosting on wedding cakes. It's just too sticky, but I tell my clients that it can be used as a "filling", but use buttercream on the cake. Hope this helps! (maybe icon_smile.gif )

Cream cheese frosting will not be white white. However it is pretty white if you don't have anything else that is true white right next to it. Try the whitener on a small amount and see if you like the color. I have piped with cream cheese frosting just fine. Get the right consistency by the amount of powdered sugar vs liquid. And yes, carrot cake with cream cheese frosting is the BEST combination.

For an outstanding combo, sprinkle in a little cinnamon with your frosting... YUMMY!
