Hi all, I have a order for a red velvet cake. I have made them before but they are so dry. I have used the box cake mix. Any suggestions?

If your willing to try scratch, try Cakeman Raven's recipe. You can find it on Food Tv's website.

I use the McCormick recipe on their website...It's good. Of course its scratch, but worth doin all the work of a scratch cake...

I second Cakeman Raven's recipe ! I made it over the weekend and it was so yummy and moist.. It won over the bride to be for her cake..!

I use the DH red velvet, and add a box of white chocolate pudding mix, 4 eggs, 3/4 C each of oil and water, and 2 tsp clear vanilla. Makes a nicely moist cake.

I have a Cakeman Raven cake and a doctored DH RV cake sitting side by side in my kitchen right now. I wanted to do a taste test for a cake that I'm doing this weekend. In my opinion, the DH was just fine, a beautiful red, a wee bit on the light side as far as density, but Cakeman's is superb! Very dense and moist and decadent. I baked it twice and on the 2nd round, I cut the oil down a bit, added another tsp. of vinegar, a little extra cocoa (per reviews on Foodnetwork)and it was just like my Mama used to make! I have been making a ton of cake lately, some from scratch and some doctored mixes. I have come to the conclusion that I can do a scratch cake just as quickly, if not faster than a box cake. So, don't let the fact that Cakeman's is from scratch deter you. It is a simple and quick recipe, yet the result tastes like you prepped for hours. You might try a taste test and see what you think

I have got to try Cakeman Raven's recipe! Red Velvet was one of my favorite cakes when I was a kid.

Thanks everyone, nope i am not at all afraid to try scratch. I just never had luck with the box red velvet so i was alittle leary of scratch. I had found the Waldorf Red velvet receipe on here so i will compare. It seems as the cake man receipe is a favorite. I will let you know how it turns out.

I made a test cake with Cakeman's Red Velvet recipe last night. I just checked it now. The cake is extremely oily and gross. I'm wondering if I did something wrong. For those of you who use that recipe, do you make any alterations? Any ideas on what could have happened or tips on how to improve it? I wonder if I didn't mix the dry ingredients into the wet ones enough because I was afraid of overmixing.

I second that!!!

Once I tried his recipe I have NEVER used anything else again!

JMR I am not sure what happened with your test cake but follow the recipe to the letter from his website....

I have yet to have a problem with it, but think that you really need to follow his directions about mixing!

hmmm...I did follow the directions on his website. They just say to slowly add dry ingredients to the wet ingredients until they are combined. I'm going to try it again tonight. I really want to get it right since so many people love it. Wish me luck!

Our family recipe is very similar to cake man raven's, but we pour a milk/sugar mixture over the cake once it comes out of the oven. It is to die for when you top it with cream cheese icing! Sooo moist!

JMR531 - If you see my last post, you can see the modification I made. I read through all the reviews on Food Network and again and again, people said it came out greasy, so instead of using 1 1/2 cups of oil, I only used one cup, probably a little less. I also increased the vinegar and the cocoa as I stated. Mine was just perfect, moist and dense without being greasy at all. Please try it again with less oil. It has buttermilk so that makes it very moist, and my feeling is that it doesn't require as much oil because of that. I think if you make the changes, you will be very happy with the result.

I forgot to mention that I originally got the recipe from his website and then went to Food Network and also saw it there. They are the same exact recipe but the tips from the reviews on FN were very helpful.
