they get paid the same, but alot of people dont use them in thier films because they find them to DRY!~!!!!!!!

That was one of the lessons they taught us in culinary school...Never walk away from your whipping cream. I also learned "never walk away from your sugar as it's cooking" the hard way.

yes I was addressing you and any one else that would imply something similar. This is word for word what you said in your op "Isn't that kind of cheating your clients?"
It is my opinion that implying that box cakers are cheating their clients is really rude. I would never say to one of the amazing and professional cakers on here that use boxes that they are "cheating their clients." I would think if you were not wanting to separate yourself and therefor creating grief that you would remove the implication that people are cheating clients. I've been on cake central for over two years and have grown to love the suggestions of all the ccers that use mixes as well as scratch bakers. We are all equal and no one is cheating anyone.

It was a question. If you don't think you're cheating anyone then that's fine. I wasn't implying anything and I don't know why people get so bloody worked up. If I'd said "that's cheating your clients" then it would be rude. I didn't mean it in a rude way at all and if you knew me you would know that. But if you choose to take it that way then that's on you...not me. I was curious to hear what everyone thought about it and was just projecting my own thoughts. It has no reflection on anyone's integrity or equality. I don't think I'm better than anyone else and just because I asked a few simple questions everyone seems to think I think I am.

Holy crow folks...calm down! It's only a piece of cake for cryin out loud!!

Sally, don't sweat it. I remember when I first realized that some bakeries used mixes and didn't bake from scratch.....I was pretty shocked too.

I know exactly how you feel, you don't need to defend your words at all. If someone wants to read more into it then you intended well, that's their problem.

You shouldn't be surprised tho. I'm very new to this game. I've only actually had 2 paying clients so far because I just finished school not long ago. I also don't know anyone else who does cakes except my classmates and they all do scratch cakes.

Well, I've never been to culinary school and the only job I've had in the biz is as a grocery store decorator...so techinically, no I don't qualify for a toque. But, I have been cooking, baking and decorating for 24 years. icon_biggrin.gif I do a lot of online researching and a lot of experimenting. Plus, if there's a cooking/baking gene, I have it. After reading pages and pages, I've not come across one single post where it was overtly stated or implied that scratch bakers are better than mix bakers, or vise versa.

I honestly wonder why box makers often have the perception that scratch bakers are looking down at them.
