Pineapple Cake

A couple people asked me for the recipe for the pineapple cake I posted in the galleries. So I thought this would be the right place icon_smile.gif.

Pineapple Cake
3 cups flour
3 tsp baking soda
3/4 tsp salt
3/4 cup vegetable oil
3/4 cup plus 6 tbsp buttermilk
4 1/2 eggs
1 1/2 tsp vanilla
2 1/4 cups sugar
12 oz crushed pineapple, drained
1 1/2 cups chopped pecans (optional, I didnt use them)

1) Preheat oven to 300.
2) Combine flour, baking powder, and salt.
3) In separate bow, whisk together eggs, oil, buttermilk, and vanilla.
4) Stir in remaining ingredients.
5) Bake 35-45 minutes (you may need a little more time, I dont remember exactly).

(Note: The outside of the cake got a little bowner than I would like, but the cake still tastes good.)

Frosting
3/4 cup butter, soften
6 cups powdered sugar
1/2 cup plus 1 tbsp well drained crushed pineapple
1 1/2 - 3 tbsp pineapple juice

1) Cream butter.
2) Beat in powdered sugar and pineapple juice.
3) Beat in pineapple.

Filling
2 tbsp sugar
2 tbsp flour
oinch salt
1/2 egg
1/2 cup diced fresh pineapple (I used drained crushed pineapple)
6 tbsp pineapple juice
1/2 tbsp butter

1) In heat proof bowl over simmering water combine all ingrediednts except butter.
2) Cook, stirring frequently until mixture thickens.
3) Stir in butter and allow to cool.
