I am making cupcakes for the birthday party of a friend's little boy. I ahve never made cupcakes before-many muffins, but no cupcakes. I have a few questions:

1. Do I have to spray a grease the cupcake papers so that the cupcakes don't stick and the paper peels off easily?

2. How do I fill them? She wants german chocolate cupcakes with both the traditional german chocolate frosting (cocunut and pecans), and chocolate frosting. I am trying to figure out the best way to achieve this.

3. How full do I fill them with batter?

Any help is appreciated-thank you!

You pretty much tackle them the same as you would your muffins.
1. No need to spray the liners
2. To fill my liners, I like to use a pastry bag or large ziploc bag with one of the corners snipped because it's a bit neater.
3. For the frosting, you could spread the chocolate and then go back and do a swirl with the traditional german chocolate frosting - just be sure to use a large tip so that it won't get clogged (been there, done that!)

no spray, just liners.I use an ice cream/cookie scoop to fill 2/3 full with batter. I fill with a very large round tip and then ice with a 1m tip. It is going to be difficult to fill them that way with a chunky filling, though. You might want to use an apple corer, cut out the center, fill, then plug it.
