I've got some tightly wrapped in my cabinet that I made a week ago. Is it still good???

i won't even tell you how long some of mine has been stored away.

Yes, a week will be fine.

Does it have to go in the fridge or can you just store it in the pantry? I want to make up some batches but I'm wondering if they have to go in the fridge or not?

i've heard it both ways. If you refrigerate it, you have to let it sit out to get to room temperature and let the condensation evaporate. But, you shouldn't leave it unwrapped because then it dries out. i use so much of it, that it never lasts that long on my shelf, 2-3 weeks at most and it is fine.

Really? 2-3 weeks is ok? Wow, I'm so excited! I can make a big batcj of it. I was thinking 2-3 days, or a week at most.
