How To Serve A 3-D Cake?

I've seen various professionals (on Cake Boss, Ace of Cakes, and Food Network Challenge) making large, 3-D carved cakes. As far as I can tell, they don't put a whole lot of cake board in the middle of their structure - it looks like it's pretty much solid cake and filling. Is this the norm? It just seems like this would be so hard to serve!

In the past, I've made a couple of smaller 3-D cakes and I always put 2 layers of cake plus filling, then cake board, then the next 2 layers of cake plus filling, etc. Then the customer can serve the top portion of the cake, remove the cake board, and serve the bottom half. It has worked really well in the past, but I was just wondering how everyone else does it. If you don't put cake boards in the structure, how do you serve the cake?

I've done it both ways. I agree with you, it makes it much easier to serve with cake boards in the middle. For the ones that I did not put cake boards in the middle, they just hacked it up the best they could. It's funny it seems like there is always some one there that doesn't like icing and they love the pieces that just have filling on them.
