Anyone have a good sugar free filling recipe? I need something for my diabetic FIL. I bought the Sweet & Low cake mix but want to spice it up with a filling.

How about sugar free instant pudding? Just decrease the amount of milk it calls for so it will be a little more substantial.

cool whip topping, cream cheese, and a sugar free pudding mix.

mix together the cool whip (about 1/2 the container) and pudding mix, whip up the cream cheese in you mixer until soft - fold the two together.
