Sorry if this is an old topic but I can't find it anywhere. When I roll out my fondant it sticks to the counter. I've used conf. sugar, corn starch and shortening. The shortening just gets greasy although it works. The others work but only after I' ve used alot then the fondant gets that cracked look. Any advice would be great. Thanks

I found getting the large Roul-Pat silicone mat has been awesome for rolling out fondant.

If you have the money invest in sugarshacks videos. She explains how to roll out fondant. What I have learned is that she generously coats her counters with cornstarch and as she is rolling it out, keep lifting your fondant off the counter and keep adding more cornstarch if it is starting to stick. Hope this helps

I have worked lots with MMF, and I've learned that when corn starch doesn't help with sticking, I have not worked enough powdered sugar into the main batch yet. Also, letting it rest a night after making it really helps with the consistency. If you find after its rest it's still too sticky, you definitely need more kneading with powdered sugar.

Once I've gotten the right consistency, and have let it rest, I roll it out on a silicone mat, using a light dusting of corn starch (sometimes, you have to flip, re-dust, and re-roll as you go). I would not use shortening, as I have found it just reverts back to being too 'wet' and not workable.

I just finished watching Sharon's Flawless Fondant video. I have always had the same problem with the sticking and with my fondant drying out and cracking when rolling it out on the counter tops. After watching her video, I will be getting a silicon mat to roll out on.

Since I have started making mmf, I noticed if I didn't add enough PS that mine is sticky - and not just to the counter!. But as long as the amount of PS is right, mine doesn't stick. Our Wilton teacher told us to use PS or Crisco if it gets sticky.

I have a heavy piece of clear vinyl (walmart fabric department) that covers a good section of counter top. I lightly coat it with shortning, and while I am rolling, I lift and move to make sure it isn't sticking anywhere - never had a problem (and you can pick up the whole piece of vinyl to put it on the cake - works like a charm!
