I love pear pie, pear jelly beans everything with pear is great! so pear cake.... how can it be bad?
me too, lol. i can't figure out why EVERYBODY doesn't love pear like i do
it's in the oven now.
i used pureed pears and kerns pear nector.
i also added the beans of one vanilla pod.
batter was quite subtle...i am not a big fan of subtle....
so i added 1 1/2 teaspoons of pear extract.
i have toriani pear syrup here too, so if this cake is not "peary" enough, that will be my next attempt.

That sounds so good! I have seen recipes calling for pear to add moisture, but not as the main flavor.
it's done! and it's really good
flavor is still on the subtle side, but i am betting the flavor will get stronger by tomorrow like a banana cake does (i will report back).
i adapted the wasc (half-recipe) as follows (and it was enough for 2 8x2 rounds):
1 white cake mix (i used betty crocker)
1 cup + 2 tbs cake flour
1 cup sugar
3/4 teaspoon salt
4 egg whites
1 1/2 cups pureed drained lite pears
1 cup kearns pear nectar
1 teaspoon real vanilla
seeds of one vanilla bean
1 1/2 teaspoons pear extract
i will wait until tomorrow to decide if it needs more pear flavoring. it is lovely as it is but sometimes i crave PEAR, not pear, lol.
i would love to make this from scratch...if only i knew how....

That sounds really refreshing! I know in juice they use white grape and it really brings out the pear flavor-just a thought. It might add a crispness and enhance acidic balance that compliments pear so well.
I think I may just be making another cake tommorrow!!!
What can be put in flour to make it "cake flour" is that possible?

katie - normally the wasc has ap flour, so i bet you can use that. 1 cup ap=1 cup plus 2tbs cake flour. i don't think there is anything you can add to make it cake flour, i think cake flour is just more finely milled.
any suggestions for a scratch recipe we could modify for pear?
For scratch I would just make a white cake and then infuse it with a syrup using pear liquor or the nectar. Maybe make a pear curd with the nectar for the filling. I've never tried making curd with anything other than lemon, but I've seen recipes using all different fruits.
Or maybe find a good applesauce cake and sub some pear puree. I wonder if roasting the pears first will give a greater pear flavor?
Well I am testing out some ideas...
I am testing the difference between canned pears that I put thru the processor and pear "applesauce" that I got at publix. The premade sauce has quite a pear flavor!! I think I may try that hummm.... I just finished my cakes for this weekend. Now I have to take a nap and get ready for work tonight. Tommorrow I will make this cake.. wondering what filling.. and I love cupcakes so maybe some of those with a nice bold frosting.... hummm decisions decisions....

i bet "pearsauce" would probably have more pear flavor than pureed can pears. please let me know how that works out!
my cake WAS more flavorful today and even better, i could not really taste the cake mix base today! i still want more pear flavor though, but this cake was really fabulous (i am on my third piece today, lol).

I have 5 little taste testers and one big one at home and they all agree that the pearsauce tastes the best so that is what I will make my cake with...
I have recently come across 2 different pear cake recipes. One is in a 9 x 13 pan and the other in 8" rounds. Don't know if the 9x13 could be done as cakes for decorating but it is really awesome. I have taken it to 2 different ladies events and everyone said it was the best cake they had ever eaten. I am a huge fan of chocolate, but this pear cake is almost as good.

katie, i was waffling between brown sugar smbc and vanilla and i went with vanilla for both filling and frosting. i am glad i did because the pear taste is delicate and i think the vanilla was just right for it without overpowering it. omgosh, it was even better on day 2. i don't even think you have to be a pear lover to enjoy it

i got mine from amoretti. it is kind of expensive...about $35.00 for their smallest size. it smells so wonderful, yum! they also have a pear compound. i have a sample size and i think i am going to break down and buy the $35.00.
i am also going to buy some from bickfordflavors.com to play with as it is pretty affordable (and they have lots of other great and unusual extract flavors).
most of the pear cakes out there that i found rely heavily on cinnamon, nutmeg, etc. for flavor, but i really just wanted a cake with the clear taste of pear and no distractions!
sometime this week, i will probably make another attempt using monin pear syrup. that HAS to be loaded with pear flavor i would guess

for a good pear flavor i would hit up a farmers market for some homemade pear preserves. that way you don't have the preservative flavor or the jarred extract flavor. i've used homemade apple butter in spice cupcakes and they were gone within the day. lol. the homegrown/homemade goods are the greatest!
Funny... I have a note to return a call to amoretti!!! I guess I will have to let them know I want to try the pear extract!
