Hi Everyone, i have come across a small obstacle. I have a birthday party that i am gifting a cake to this saturday. The party is being held outdoors in a picnic setting and is about an hour from my house. I have one 12X18 cake filled and 2 smaller non filled cakes. My question is how long will these cakes last outside in approximately 70 degree weather? We will be at a venue but i don't believe there will be access to a fridge or freezer. I can fit the 2 small cake in a cooler but what should i do about the larger cake? Any help would be amazing.

70 degrees should be fine for them - that's the upper limit for room temp, so that shouldn't be a problem at all! It's when you're in the 90s that you start having issues! lol - Most of the parties I have cakes at are around that temp, even inside, and I always use BC, even if it's under fondant, and I never have a problem, especially for that amount of time.

I agree with renaejrk. 70 degrees for several hours is no problem for BC. I have even left an unfilled cake out overnight with no problems. (However, I used to use a BC recipe that had milk in it - more than several hours for that would be a problem).

If you have uncooked ingredients in your filling that might spoil, then be careful about how long the cake sits out. (The cake is not much of a gift if people get sick from it!)

How do you plan to transfer the larger cake? I have inverted large plastic storage containers (I prefer clear ones) before to move cakes or store them for short periods of time. It is best to use one that locks shut! (Wash it well before, of course.)
