Fresh Roses

Help! I'm making a large (8 tiered) wedding cake next week and the bride wants fresh roses (150 in all!). I'll take all precautions for food safety, but since this is the first time I've decorated with fresh roses, I have no idea how long they will stay fresh after I place them on/around the cake. The reception room is air conditioned, which I know will help, but I have no idea how long they stay fresh.

I had a cake with 12 doz roses on it in June. (posted in my photos) I kept the roses in a cool place and in water right up until the minute I was putting them on the cake. I set up at 4:00 wedding was at 7:00, cake was in air conditioned room. The roses were still fresh at time of reception.

I agree, they will be fine way into the wee hours of the morning and then some. Roses are wonderful to work with, they hold up so well out of water!
