How Early Is Too Early????

What would be the earliest you would bake a cake and decorate it for a Sat. wedding (without freezing or fridge).

I have two weddings this weekend and a lot of cake to bake/decorate. I work full time also, so time is limited. I have some of the layers baked and in the freezer but im out of freezer space. I would like to make the grooms cake tomorrow and get it decorated, but would that be too early??

The earliest I have baked for a saturday wedding was Wednesday. That is when I usually bake, but recently I have been baking on thursday, both ways the cake is great! HTH!!! Good Luck!

I have a wedding cake do on june 27th for a co-worker(my gift to them). Here's my plan...baking on tues and wed., making the buttercream and icing all the cakes on thurs., then putting fondant pieces on fri. I also work full time and I really only get to work on my cakes very late at night. lol I think this one is gonna be an all nighter! hth

Depending on when the cake is dueon Saturday Wednesday or Thursday. I like to give myself one whole day and then some to decorate incase any disasters arise. Saturday morning I would bake, trim, and fill on Wednesday (refrigerate), then decorate Thursday and Friday. Saturday afternoon/evening, bake, trim, fill Thursday, decorate Friday and Saturday morning.

I almost always bake on Wed and leave at room temp. for Sat cakes.. If I have to bake any earlier, I freeze.

So for those of you that do this often... would you ever bake a cake on Tuesday and decor wed/thurs for a Sat evening wedding???

My problem... its a family wedding so I have rehersal on Friday and then wedding on Sat. I am crazy for even saying I could do it.

Circumstances forced me to do this last week - it wasn't a wedding cake, though, just a sheet cake. I baked Monday, decorated Tuesday and it was served Saturday. Cake was still fresh. I wasn't particularly happy about it, but it was for my mom, she wanted it and she took it at her own risk. Apparently it wasn't a problem. I would have concerns about the structure of a wedding cake, though.
