I need to make a friend's daughter some cuppies for a baby shower and wanted to know if I can use the WASC recipe for cuppies or is there another one that works well. I've tried one of my favorite cake recipes for cupcakes in the past and well....let's just say the dog walked away! icon_cry.gif
Any ideas are greatly appreciated as I'm still new to this whole thing but must admit I love to try new stuff!! Thanks!

I have only used this recipe for cake, but it might work for cucpakes. I just found it on CC. I really liked it a lot. Hope this helps!

I was wondering the same thing. And I tried the Billy Reece Vanilla cupcake recipe on Martha Stewart site.
I wasn't too impressed with it yesterday when I tried the cupcakes but today they taste quite nice. Maybe give that a try.

Thanks everyone! Now that I have options...I may have to try all three! icon_smile.gif
I did use a chocolate mix with the WASC recipe and they turned out great so I'll start there! Wish me luck icon_lol.gif

Cakelass,
I also tried Billy's vanilla recipe last week and for some reason they were much better the next day...the day that I made them they tasted too 'eggy' to me...next morning, better...but still not exactly what I was looking for....the search is still on for me.

KKristy,
I also thought they tasted eggy. I found them too heavy for a cupcake. In the next week I will be trying a new recipe that I found using canola oil. I will post my findings as soon as i make them.
You can find the recipe on www.creativeconfectioneryblog.com.
I am thinking they might be nice as I made some chocolate cupcakes the other day using canola oil and they are delicious chocolaty and fluffy.

Has anyone had sucess with oil in cupcakes? Does it make it too dense?

I have used oil in chocolate cupcakes and they were the most moistest and fluffiest cupcakes I have ever made.

me too!.. for the Hershey's recipe, but for some reason it wasn't the same for vanilla cupcakes. Maybe the recipe was bad?

I was doing a WASC wedding cake and had batter left over, so I made cupcakes. They were VERY good.

I have also been asked to do Tres Leches cupcakes for a birthday party, so I used my WASC cupcakes and turned them into Tres Leches. I found some Dulce Leche coffee creamer that I used with Bettercreme. YUM!!

Oh, that sounds good! How much coffee creamer did you use, and was it for filling or frosting?

The filling was equal parts of sweetened condensed milk, evaporated milk and coconut milk. I poked holes in the cupcakes (with a flower nail icon_biggrin.gif) and poured the milk over them ... and again ... and again. The frosting was International Delights Dulce Leche coffee creamer and Bettercreme.

I didn't have a clue what they were supposed to taste like, but I was told that they were perfect. That was a trial run and I'll be doing them again for the actual birthday. Since they went over so well, I guess I'll do WASC again.

This is the one that I used and I just used all purpose flour cause I didn't have any cake flour on hand and it also didn't say you needed to use cake flour. I really enjoyed this recipe and it will be my go to unless I come across a better one icon_biggrin.gif http://www.creativeconfectioneryblog.com/2009/01/classic-vanilla-cupcake.html

Ok, made the cupckaes yesterday. They are very nice and moist ad I tried them a day after and they are still nice. The only thing I did notice is that you can slightly taste the sour cream I think. But I still want a fluffier cake. So I am still going to search. But I did like these better than the Billy cupcakes.
Two more recipes that I found are on Baking Bite http://bakingbites.com/2008/06/vanilla-cupcakes-with-vanilla-frosting/ and
on Nosh with me http://noshwithme.com/2006/05/vanilla-cupcakes/. I will be trying these when I get a chance as well.
Has anyone got any further suggestions?
I love to hear more feedback.
Also has anyone tried the Amy Sederis recipe that people rave about?
