Mini Cupcakes - How Many From A Box Mix?

I'm going to be making mini cupcakes for our family memorial day party and I have a couple questions. How many mini cupcakes will I get out of one box cake mix? And can you fill mini cupcakes like you can regular sized cupcakes? And what kind of fillings are good for being left out? As I'm going to be making these ahead of time and won't be able to store them in my fridge once I fill them with filling. Thanks!

Hi, I saw on Wilton.com that one box will yield about 5 dozen mini cupcakes and the chart suggests that you fill the cups with one "heaping tablespoon" and bake at 350 for 8-10 minutes. As I have not filled cupcakes before I don't have a lot to offer in way of fillings, but people rave about the cookies and cream buttercream on this site and I believe that should be able to sit out just fine. depending on if you want them even w/ the wrapper or a little over - between 5 and 6 dozen. i used a one tablespoon disher (spring loaded scoop), about half full on the last ones i made. it is the easiest way to fill any cupcakes!

i wish i could help with filling - i haven't tried that yet.

I ditto the answers of approx. 5 dozen... I just made 2 dozen yesterday and I used a tablespoon to fill them. They came up over the liner just a tad so maybe next time I won't put in so much. No advice about filling them though, sorry.

Thanks everyone! Now I know I definitely will only need one box of mix. And have a feeling with 5 -6 dozen I will have more then enough to feed everyone.

They are pretty addicting though so don't be surprised if they are gone before you know it. icon_wink.gif Keep in mind a box mix usually makes 12-18 regular sized cupcakes and at a rate of 2-3 cupcakes an adult they can go pretty quickly. icon_lol.gif

I get 100 mini cupcakes from one Duncan Hines Cake Mix. And yes, you can fill them just like you do the regular size cupcakes. I just use a pastry bag with a tip 16 and inject the little cuppies with the filling of my choice.
