Does anyone have a delicious coconut cake recipe? Or one they have tried and didn't like so I know what to avoid? lol.

I'm up for scratch or doctored box.. as i'm a fan of both types of cakes =)

I'm a box mix cake person myself so I like the DH coconut cake mix. I usually use coconut milk in place of the water and finely chop some coconut to put in the batter.

Yummy, I want coconut cake now. icon_smile.gif

This is my "go to" recipe for white or coconut cake. It's from Pillsbury's Complete Book of Baking (a terrific book, by the way!). It's easy to make and gets rave reviews:

Simply White Cake

2 cups all-purpose flour
1 1/2 cups sugar
3 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/2 cup shortening (I use unsalted butter)
1 tsp. vanilla
5 egg whites

Heat oven to 350. Grease and flour 2 round 9" pans. In a large bowl, blend flour, sugar, baking powder, salt, milk and shortening at low speed until moistened; beat 2 minutes at medium speed. Add vanilla and egg whites; continue beating an additional 2 minutes. Pour into the prepared pans.

Bake at 350 for 27 to 35 minutes. Toothpick test. Cool 10 minutes; remove from pans. Cool completely.

Coconut Cake: Stir 1 cup flaked coconut into batter before pouring into prepared pans.

YES! Coconut cake is my fave so I have tried many. Paula Dean's recipe is my favorite and everyone that I've made it for loves it! I left out the coconut milk, it is not necessary. Great cake! check out the reviews

I use the 1-2-3-4 cake recipe on the cake flour box. I add 1 heaping TBS of sour cream and 2 TBS of Coco Lopez to the butter before creaming with sugar. Then I add 1 TBS coconut flavor along w vanilla.

Maybe I will try that one too. I am not a fan of the Paula Deen recipe.....tried that one before. Usually I just use my favorite white cake recipe and add coconut cream and shredded coconut.
I will try this though. Thanks!
DH and I love coconut cake more than anything.

The recipe that I used seems to be a modification of the epicurious recipe icon_smile.gif I used it because it seemed to tweak a bit of the things users complained about on the epicurious one. I may have to try that one as well! I have read that a lot of people use it as their standard white one due to the very subtle coconut taste.

I am glad you like it, I try a lot of coconut recipes before and I never got the taste that I like, then I decide to make my own and I loooooove it thumbs_up.gifthumbs_up.gif

Coconut cream is very similar to coconut milk but contains less water. The difference is mainly consistency. It has a thicker, more paste-like consistency, while coconut milk is generally a liquid. It is used as an ingredient in cooking.

Thanks for responding so fast. I know exactly what you are talking about. Would you suggest the canned stuff over the homemade cream? I actually have some of the canned in my pantry...go figure icon_confused.gif

The canned cream of coconut will be perfect, let me tell you a secret I always use the canned one shhh.gifshhh.gificon_lol.gificon_lol.gif , I use the cocolopez or the goya brand but any kind it is ok thumbs_up.gifthumbs_up.gif

This one of the best coconut cake I have ever baked! I used cake flour and the smaller can of Coco Lopez. Just made that cake last night for a Pina Colada cake.

Isn't it delicious? I fill between the layers with pineapple mousse for my take on pina colada...the only thing missing is the rum meringue icing and an umbrella pick!
