I need to make 200 cupcakes for a wedding. I would like to make then the day before, box them up, and deliver then the next day. If I get them all ready like that will there be a problem with not refrigerating them? they will have a cream cheese ising on them.
ok is started typing, but i dont know what happened to it. so apologies if this is a double!
it depends on the recipe you use, as some of them do need to stay in the fridge. apparently this one doesnt http://www.earlenescakes.com/icings.htm

Which recipe does not call for refrigeration? I am in a similar situation and they will not be able to be refrigerated.
Ok, when I took microbiology in college I found out the sugar is a natural preservative, so cream cheese icing, while perishable isn't like say leaving mayo out. Over night though, could you freeze them? I have frozen cupcakes and cake with cream cheese frosting, you can make them up farther ahead of time and they stay fresh longer at the venue if you deliever them still cold from the freezer even if they are not still frozen.
earlenes cream cheese frosting doesnt need refridgerated. should be on here or on google, it gets good reviews.

Angelicconfections, great info, thanks!!! I accidently left out a batch of cream cheese frosted cupcakes a while back, I was terrified to let my husband and I eat them the next morning but than read online that it's not too big of a deal if you leave them out for up to 3 days as long as it's not terribly hot in the house.
