Deliver Friday?

The wedding is Saturday and I can deliver the cake Friday night. Is decorating Thursday night too early for a Saturday wedding? It will be a 4 tier covered in fondant.

As long as the fillings aren't perishable you should be fine. I have to ask, though, why you can't deliver on Saturday. I'd be nervous to leave a cake overnight somewhere, considering the things that could happen to it.

Yeah, that sounds like it has disaster written all over it. Are they going to be able to refrigerate it until Saturday? Is the event Saturday morning? That just seems like a long time to let a cake sit out.

I could deliver it Saturday but my husband and I are in the wedding so I thought I would save myself some time. We will be decorating on Friday night so I had originally planned to bring it then. Maybe I should wait until Saturday???

I would still like to have it decorated late Thursday so I can get everyone ready for the weddiing/rehearsal. The stacked fondant cake wouldn't be refriderated but the sheet cakes could be. Will it get dry??? I've let cakes sit before from Thursday to Saturday and they are fine...

The cakes should be fine, it's just the early delivery that doesn't sound like a good idea. I'd wait and take it on Saturday, personally.

Yeah the banquet hall people do not appear to be the brightest. With my luck someone would hit or tip over the cake. I'll have to rethink this.

I ice and decorate on Thursday for a saturday wedding. I never refrigerate my cakes. They sit on my counter for those 2 days just fine.

Debi, that must be because you're in a more humid climate than I am. If I leave stuff out too long, it gets hard as a rock. The buttercream doesn't do too badly, but the fondant can get downright hard. And exposed cake - forget it. Hockey puck.

The year-round average humidity here is only 43% - and it's much lower in the summer.

It's always interesting to me how we have to deal with different challenges just depending on where we live. My fondant very seldom "sweats" when it comes out of the fridge. The atmosphere is dry, any moisture just evaporates. Then it hardens...

Well, I started baking on Sunday and froze the cakes. They were excellent and very moist. I also decided not to deliver on Friday and waited until SUnday morning. I"m glad because the people running the show weren't that experienced and thought they would be moving my cake into the kitchen to be cut...it was on a 12ft long table with no wheels!!! I was so happy with how it turned out though!
