OK, when I first began decorating I said I would NEVER buy my fondant! But I have to admit, I do buy it! I buy it everytime. icon_redface.gif

I used to be ashamed, but after months of therapy, I have come to terms with it and now know that everything will be just fine.

Now, feel free to share your "said I would never..." story. Don't be shy. We will be supportive. thumbs_up.gif

That's the other thing....

uuhh, I buy Wilton. icon_cry.gif I know it tastes bad, but for the most part, I usually make buttercream cakes with fondant accents instead of covering the whole cake in it.

Congrats on working through your shame - hee,hee.

I'm a hobbyist and I buy mine. It's just so convenient to have that tub of Satin Ice there ready to go, and I do enough cakes that it gets used up. It seems like the people that like fondant on a cake like the Satin Ice as much as homemade, and the ones that don't like fondant peel it off anyhow! ; )

I also use Wilton and, like you, do BC cakes with fondant accents. About 80% of my clients LOVE the stuff! Heck, my own kids love it!

But, I had a client (who always asks me to put LOTS of fondant on her cakes) tell me a few days ago that she had bought some Wilton fondant and used it on a cake she made herself and didn't like it. icon_confused.gif

My theory is that I roll it thin enough that it absorbs some of the flavor and sweetness from the BC when it sits on my cakes overnight.

I'll join in on the shame. I buy Wilton. It's just SO cheap w/ my Micheal's 50% off coupon. I used to buy the good stuff and then no one ate it still.. no one would even taste it. One lady thought it was for "decoration only" and this is with the satin ice!

I've also found that my customers don't find Wilton to taste nearly as bad as we think it tastes. Actually.. my bf likes it. Odd I know.

I to purchase my fondant.
I have a local bakery wholesale supplier. He lets me buy from him all the time. He is even getting Satin Ice in for me.
He calls me now when he get new filling in or chocolate. He likes my feedback.

I buy wilton too, but again, all of my cakes are buttercream, with a small amount of fondant accents .. it is just easier for me.

I said I'd never use a box mix. I still bake from scratch but there are a few cakes that I'll do from a mix with doctoring.
I also said that I'd probably never do fondant. Now I love to work with it (sometimes).
I make Michelle Fosters fondant recipe or I buy Albert Uster fondant. Love the stuff, they both taste wonderful.

I told my husband that I will only take a "few" cake classes, now I search high and low to find another class to take. I think mostly because I want to get away from the house, the dogs, him, and everday stresses.

Yes, I agree, the everyday stresses are the reasons I do my bridal tastings away from home. Shhh, don't tell the fam.

me too! I was strictly a buttercream gal up until a few months ago. I love the stuff! Hate the taste and I even by satin ice but I just love the look. it's so smooth and pretty and most times i like to make it sparkly.

I admit I use Wilton when I do fondant accents, for me I am only a hobby baker and find it WAY easier. And as all the accents are usually roses that are rock hard no one eats them anyway. ONE DAY I want to make the marshmallow fondant to ice some sugar cookies, we'll seeicon_razz.gif

I said I would never freeze my cakes but now I'm seriously considering it. I have a little girl now and have to really plan when I'm making a cake for someone... going to go hide my head in the sand now.

i too buy my fondant! i work full time so my cakes are made on the weekends or late into the night, so its convenient.......sorry icon_lol.gif my four year old granddaughter loves it though. if i don't watch her she will eat all my decorations before i can get them on the cake! i am just a hobby baker who happens to be selling some cakes and making some extra cash to help out my cravings for a new pocketbook every few weeks!!!!!!!!!! thumbs_up.gif

I too have used wilton fondant in a pinch,, OK I mean regularly, am seriously considering buying a big ole tub of Satin Ice, and have on occasion, OK, constantly frozen cakes.....and they taste great!!! Whew, confession is good for the soul!!!!

I used to say I'd never do a stacked cake that wasn't a pound cake of some sort. It scared me to death to put a soft cake in a stacked configuration like that. Now I'll stack any flavor. It was just my inexperience talking.

I also used to say that I'd never deliver an assembled wedding cake. All my stacking would be done on site, but now I'm over that fear and have actually delivered a fully assembled 5-tier job. It still makes me a little nervous though.

Wily kit....OMG i am laughing sooo hard right now. When i clicked on the next page, i turned away for a moment and when i looked back at the screen I said,
"Ewwwh, a bug is on the screen." I looked at it, and picked up a tissue and tried to kill the little bug...much to my surprise...it wasn't actually a bug at all, it was just your avatar. I feel so stupid, but it was funny.

I add raspberry flavor to my fondant accents and that works out good.

I only use Wilton for practice stuff that will never be eaten or seen or smelled by humans.

Freezing cake is a pastry chef professional thing to do.

Re: cake mix?-- the pros, professional cutting edge and fine dining chefs and pastry chefs use so many chemicals nowadays on purpose to make the chichifoofoo weirdy things, the argument about chemicals in cake mix doesn't hold h20 (water) anymore. icon_biggrin.gif Never did but anyway...

Chemicals are our friend.
(Except not artificial white/clear vanilla in icing) icon_biggrin.gif

I said I would never allow my little 'cakes on the side' business to interfere with my family's needs, but it DID. I morphed into this evil stressed-out cake witch and yelled at everyone all of the time for sticking their fingers in the buttercream or making off with pieces of fondant. I made myself cut back, and we're all happier for it. When my kids are a little older, I'll take on more jobs.

Fondant.... I usually make MMF, but I did buy the Satin Ice in white and loved it. It tastes almost exactly like homemade MMF. I am making an all-red wedding cake this summer, and since I don't have an air brush kit, I'll be buying some red Satin Ice. Hope it works...

Y'all had me until you mentioned Wilton. Sorry...that stuff tastes like bug spray.

I do freeze my cakes though. I think it actually helps them firm up and settle better.

ok I will admit it ;even if mostly everybody think it taste soooo bad....I love Wilton fondant taste and I am always anxious to have a cake order that will be fondant so I can eat the left overs ... icon_redface.gif I may seem like a weird person...but that's the way it is!

oh I forgot to saw that my Dad loves the taste too!! I made a Wilton fondant covered cake for Chritmas and he was actually asking me for of that" stuff on the cake" maybe taste runs in families...don't know...

I used to make my fondant, or I guess I should say, "The bakery I used to work at used to make fondant." What a nightmare! I had the worst trouble with quality control!! And, there is nothing like trying to finish a cake in 3 hours with crap fondant. Wilton, Satin Ice, Pettinice, whatever is on sale is good for me!

Maybe it's because I am new at this...but I have never said that I would not do this or that ever. If I think that it will work or someone else does, I will give it a try. LOL. icon_lol.gif

I can't stand the taste of that Wilton fondant but it is great for accents! I will use the MMF that I make to cover the cake in. If I have to make a person or something like that I buy the Wilton fondant and gumpaste. Can't beat it for accents! thumbs_up.gif

I actually wont eat the Wilton fondant OR MMF either, come to think of it. I guess I am strange too. icon_lol.gif
