AThanks Loubee and Lizzy, and yes it was a last minute bow with my grumpy dad standing over me waiting g to take it before the glue had even dried !

Nanny pretty Xmas cakes - I really must get mine started ! Although got an irish 60th cake this week !

Maisie, just a thought when you go back to drop of your tin, pick up the petunia cutter on the wall on the left as you go in, you love the hydrangea cutter I know, so you'll love this one too.

Maisie, I've had a very very close look and after going over your cake a million times- is it the white hem on the shirt sleeves?? Otherwise you're having us on lol

 

Siany, just wondered why you're asking for gingerbread templates when you've got a mould? Did you want to make something different? Was thinking of getting the lakeland mould- is it not great for gingerbread houses?

 

Nanny, lovely cakes- my fave is the bauble one :)

 

Kuuushi, hard work being self employed isn't it? Definitely more stressful than having a stressful job lol

AI would kill for a Yorkshire pudding like that and cooked in oil I made mine with butter today but made everyone else's with oil and they looked lovely

AAw cute teddy tiddy. And did I read right? Is it for the end of January next year? How organised are you!

That Yorkshire looks lush jo, we haven't had yorkshires for ages.

Jean the white stripe on the sleeve is wrong but that's one of the little things. The big, glaring mistake is it's supposed to be the back of a shirt so I should've built the neckline up a bit. As it is it looks like the front. I was going to find out what tin it is so I can buy one but I don't know whether I want to now.

I'll do that nanny. I do have another one but I can't find it, don't think it's petunia tho, pretty sure it's just called blossom.

the mould is excellent, I really like it but for home I like something that challenges me. I made about 8 lakeland houses last year and I can knock them out really quickly now, there's no challenge. I have bought a Victorian house tute to use now.

The lakeland one is 8 inches high, 7 inches wide and just over 7 inches deep, just roughly measured.

Maisie I can't see what's wring with your shirt, you'll have to tell us what you think is wrong.

Sorry I'm quiet, seem to have come down with another bug right on top of the last one. Feel crap :(

AI don't use the blossom one much nanny, that's probably why I can't find it. I use the hydrangea all the time, I love it. Do you see what I mean with the shirt?

If someone asks for a wedding cake to serve 75-100, what serving amount would you for? I was working on the basis of 75, so was either going to do 6", 8", 10" round (serving approx.75) or 8", 10" square with 6" dummy (serving approx.82). Is it normal to assume that some people won't have cake or better to go with the upper estimate of 100.

 

I'm panicking slightly on the costing front, because I can't work out how much ganache I need (and that ganache calculator thingymajic spreadsheet wouldn't work!) I wasn't going to charge them for all the time I'll spend making it because they're friends, but need to cover costs and perhaps a bit extra.

 

Husband just shouted at me because I keep saying I think I might be out of my depth with a wedding cake, but really not sure... Sorry to post such a selfish post, just a bit worried.

AMorning cake mates! Sock - stick with your calculations and give them a cutting cake to keep out the back. I've done it before. You don't need to decorate to the same standard. Sorry got to dash - got to be in work early. Kathy

AHi all, sorry, haven't read back as doing a quickie read before school!

Sock, I work to less than the full amount if doing larger sizes will give far too much (does that make sense?) The reason is that not only will some people not have it, but they won't all turn up as well. I do always tell the couple though to give them the choice. Usually they'll go with less, but some want loads left over to eat after!

Also, friend or not you need to get across to them that they can't chop and change on you any nearer the time. You'll be a nervous wreck if they do!

We managed to get one newel post up yesterday, having been at it from 10am to 9pm with only a lunch break! It's more complicated than we had anticipated due to various problems arising :-/

AMorning all.

Abit of a late question, I have a single tier 10" square on wed, in white with pink flowers, will this look ok.

I made 2 pink gerbera's, with some darker pink ( that's what she wanted ) petunias, with white filler flowers, to go on 2 corners, leaving the middle free for her bride and groom, oh and some white cake lace around the side, what's everyone's thoughts on it.

No. The colours will be classy as you've got the white in there which will stop it looking 'princessy', gerberas are a beautiful flower and will make a statement as opposed to being little bitty things that just blend in, and the cake lace will add an extra layer of interest that will lift it. It's just a shame they'll plonk a bride and groom figure on what sounds like a very nice cake!

Hi everyone I am new to this and need serious help with my Buttercream!!!!

 

I'm having issues with my buttercream, every time I make it, it comes out runny and I am unable to decorate my cupcakes neatly because it melts. I usually make it the day before as this has happened many times and keep it in the fridge before use. However it still comes out runny and its really annoying!

 

I got my recipe from BBC foods, but I have doubled the quantity to make enough which is:

 

  1. 280g Butter I use stork 
  2. 560g Icing sugar

 

I also use an electric mixer and beat the stork for a while and then pour in all my icing sugar.

 

 

P.S. The cupcakes are never hot when I do the piping.

 

I hope someone can help. Thanks
