AWow some gorgeous sounding cupcakes flavours, now I'm spoilt for choice. And I have just reread my last message and realised it make no sense at all haha. But basically I meant to say thanks for the oreo suggestions that sounds yummy!

I haven't tried freezing it, sorry. The egg whites I used were frozen and it worked, but don't know if the finished SMBC would. Both BraveTart and Sweetapolita say it can be frozen, although their timeframes vary quite significantly (I follow both blogs, so trust them). Maybe make up slightly too much and try freezing & defrosting a bit?

 

I could murder a cupcake now, but still on this blasted gluten free diet for another couple of weeks. I made a GF chocolate pudding at the weekend, which was lovely with custard and going to make a GF pecan pie at the weekend.

 

Still having a crisis over this wedding cake design - that seems to have lasted for over a month now. Just can't seem to decide on a design that I think I'll be able to do well enough (perfectionist alert) and wondering whether to tell the couple I can't do it, so they've got time to arrange something else. I do have a big bar of Galaxy in the cupboard, so maybe I should practice the chocolate leaves again before throwing the towel in. Regarding stacking - do people here use a cake lifter or a cranked palette knife? I would've thought a cake lifter was more stable, but read otherwise and now I'm confused. It doesn't take much...

By the way, Galaxy was still on offer in Asda last week for anyone who needs any (for baking or consumption!)

AMorning all, mmm, oreo cupcakes sounds a bit alright don't they?

Kathy they just sound just awful, cant imagine me ever eating anything so bad, no seriously,Lindor! My favourite chocs ever, sounds gorgeous, want some right now!

Oh Barbara - I love the little tree (and the caravan and the rest!) - seriously the Lindor cakes were done by my daughter last year and they really were lovely.

 

Sockmonkey - re the wedding cake - what about elements from the bridal gown?  I hadn't done a wedding cake for a while and realised that I was going to be exposed if the cake was too plain.  So I got somebody to photograph the beading and I copied that in various forms on the various tiers.  She loved it.

 

Frozen egg whites??? Who knew?

The reception is the day after the actual wedding, so it's a less formal affair. The wedding day is just for family. I know I want to do a chocolate cake, with some kind of chocolate decoration that is quite modern, but worry my skills aren't upto it. I'm trying to avoid fondant icing too. I'm probably making it unnecessarily difficult for myself.

 

Frozen egg whites is an amazing discovery! I used 5 yolks to make ice cream and decided to try freezing them. I just popped them in a large ice cube tray until frozen, then popped them out and into a freezer bag. I was worried they wouldn't whip up properly, but they worked a treat.

 

Nanny - that caravan is brilliant! I'd love one like that.

Hello all, read so many previous pages but can't seem  to find my answer so I'm hoping the seasoned bakers amongst you will be able to help me please :grin: 

 

I am currently making two Christmas cakes and really need to decorate them before 1st December as I am taking a late holiday and won't have time to finish before Xmas when I get back.  My primary concern is that the coloured fondant icing may bleed into one another, I intend to store them in cardboard boxes under my stairs to keep them cool.

 

I am using my own MMF, some of which will be coloured using sugarflair paste and also using red and black renshaws fondant icing.  I will be glueing using homemade tylose glue.  As an example I will be making santa, twisted coloured ropes that sort of thing.

 

I've never decorated cakes that far in advance and would hate to come home to a multi coloured mess!

AHi JQ102, I'm hardly a seasoned baker but I think they'd be fine. I decorated Christmas cakes mid December last year, one was still hanging around in mid January and the colours hadn't bled. Mine were only green and red but I can't see the black being any different. Of and I don't make my own SP, don't know if that would make a difference.

Tiddy I'm used to Leah's songs blaring from the time she gets up til the time she goes to bed, I just tune out now after all these years! My grandad and auntie have now relieved me of the singing dolls, it's the same every year, they all ask me what they can get Leah so I give them stuff I've already bought and then I'm stuck and back to square one!

The bedding's a good idea actually roxy. I got her frozen pj's a while ago, Kathy (I think) said asda were selling them, I was in like Flynn! I've also picked a couple of frozen t-shirts up from Primarni, only about a fiver each they were. I've decided to get her an iPod nano, according to the tech man/12 year old boy in tesco, they're not much good cos you can't connect to the internet on them, that's just perfect for Leah. :-) thanks for the help everyone.

Lovely cake nanny, made me nostalgic, my gran and grandad had a caravan most of their lives, I've got very fond memories of cold shower blocks, chemical toilets, mud and the wind and rain battering the caravan all night long. :-)

Sockmonkey, how about cigarrello's? Lovely effect and relatively easy.

Hi JQ102 welcome to the thread, would it be possible for you to make the decorations before you go and attach to the cake when you get back so you don't have to worry about the colours bleeding.

 

Re freezing egg whites I never knew you could until my mum bought me a Rachel Allen book a couple of years ago and she tells you in that, so good as no waste and work just as food after being frozen.

 

Sock monkey sorry forgot to say earlier your cupcakes look yummy. Have you though about making the leave out of modelling chocolate for the wedding cake?

 

Kathy why did you tell me you can put a lindor in a cupcake, Me and Angel are gonna be addicted to those we love lindor. Looking forward to seeing your little mermaid cake, I love aerial.

 

Nanny I love the caravan cake it's so cute. Love the little tree, caravan all of it, it's just lovely. Is the caravan cake?

Maisie glad you got the ipod sorted for Leah, it's so hard now to get something that doesn't have to connect to the internet.

 

I have been doing the kitchen island at my mum's again today, it has turned into one of those things were everything goes wrong I'm sick to death of it now, just door handles and adjusting to do tomorrow then it's finished thank good. Then her new fireplace will be delivered and I'll have to put that up to arrrrgh! she's driving me nuts.

The caravan cake is gorgeous, Barbara.

 

I was going to suggest cigarellos too or maybe chocolate transfer sheets onto chocolate paste if you want to avoid fondant.

I go away on the 1st back on 15th December and of course they are for Xmas so will be eaten soon after I suspect.  Some decoration I can certainly leave off the cake, but things like the rope, border etc. will have to be put on before I go away and I will have to make the figurines before I go too hence my concern although I won't put them on the cakes.  I'm concerned because last year, I made a huge big red bow to go atop the cake, put it in a cardboard box under the stairs - got it out around lunchtime and some of the bows had broken, bummer.  Guessing though that the sugarpaste just wasn't up to it :-(  So this year I'm making 50/50 just to be as sure as I can and still make it edible.

Guys I've had a request for a number cake. Dumb question but I assume these are torted as well?

I think MMF takes a little longer to dry so make sure the cake is settled and dry before adding the decorations. I would also suggest some good old royal rather than your glue for the same reason :-D

 

I don't think the colours will bleed and nothing should break if you add some gum trag/cmc/tylo to the fondant. Make sure its not damp when you store it (under the stairs) and it should be just fine :smile:

Aaaargh :cry:!  Can't keep up with you lovely chatty bunch :P!

 

Just skimmed through the last however many pages since I was last here.  Love the cakes - can't remember which were whose now, but I especially loved Ellie the elephant, and that idea of putting the battery-operated tealight under the cauldron on the Minion cake was brilliant :D.  (Also, Tiddy, are you actually going to make that cake you sketched :-o?  I am in awe...)

 

Did my penultimate session of the Royal Icing course today - we were doing collars, and mine broke in three places.  Oops.  Think I might not have beaten the icing enough - it was my first batch of RI made with a stand mixer, and previously I'd always just added tonnes of icing sugar to get my icing thick instead of beating it.  Had a lot of fun anyway though :smile:.

 

Here's my latest cake :smile:.  It was a surprise for a neighbour who'd just had an operation, and turns out when I took it round to her that it's also her 60th birthday this week - good timing!

 

 

It's my sister's birthday next week, so I think I'll have to try out some stencilling or some cake lace... :D mwahahahaaaa

Nanny I love your caravan! Really fab! 

 

Victoria, lovely cake too- those roses are lush! I've yet to learn to get sharp edges.

 

Tiddy, will definitely torte- I've been working on cake sizes and it just seems too much cake and too little buttercream if I don't torte. I don't have a number tin, and don't ever plan to buy any, so will be carving it out of square cake. She only wants 10 servings, so looks like I'll use my 7" square. That's very handy because my normal 8" recipe goes in that. 

 

Maisie, well I'm not counting chickens yet! Its a potential repeat order (my first, possibly, ever!! LOL) - she's the lady who ordered the Optimus prime cake and cupcakes from me :)

Right, not sure whether I should go bigger. Advice would be appreciated! The photo below is a mock up of what the number 1 cake would look like if I carved an 8" square cake. I've drawn some lines to see what the serving sizes would be, and they will be 2x3" after I've applied buttercream. 

 

 

The customer only wants 10 servings, my only issue is that to get 10 servings, I've had to make the sloping bit a bit bigger, and now it looks funny, or does it? Any suggestions if it does look odd?
