I baked 2 different flavors of cupcakes yesterday. When i took them out of the oven they were perfect, nice and plump! After a few minutes they got really wrinkly on top.
Is it something I did wrong? Did they not bake long enough or did I bake them too long?

I know what you mean - mine did that the other day. Luckily they were for friends and family so I iced 'em anyway! I broke some open and they seemed fine. I'm not sure why either but maybe someone else here will give us some insight....
I'm brand new here, and pretty new to baking, so take this at face value...but I went to a baking class through the Viking school this weekend and asked just that question because the same thing has happened to me a few times. The instructor told me it sounded like I underbaked the cupcakes. My tester came out clean, but he said to leave them in just a few minutes more...and to use a thermometer to check that my oven really was at the right temp.

Thanks Sassy Sweet I figured that was what happened because a few weeks later I asked my husband to take a cake out for me thinking it was done. When I went to check the same thing happened to it and it wasn't fully baked!
Oooh, I can totally relate. Don't you hate that? They seem so round and perfect when they come out, then 5 minutes later they are shrunken and wrinkled This happened a lot to me when I first got my Kitchen Aid mixer. I think over mixing/beating the batter makes lots of air bubbles that makes the cupcake structure not as strong. Could be wrong though, but I found that beating at a lower speed helps a lot.
I'm not sure why it does that either but mine did that the other day, luckily it was just for my husband and I, but otherwise, not sat.
