Wrinkled Cupcakes

I baked 2 different flavors of cupcakes yesterday. When i took them out of the oven they were perfect, nice and plump! After a few minutes they got really wrinkly on top.

Is it something I did wrong? Did they not bake long enough or did I bake them too long?

I know what you mean - mine did that the other day. Luckily they were for friends and family so I iced 'em anyway! I broke some open and they seemed fine. I'm not sure why either but maybe someone else here will give us some insight.... icon_smile.gif

I'm brand new here, and pretty new to baking, so take this at face value...but I went to a baking class through the Viking school this weekend and asked just that question because the same thing has happened to me a few times. The instructor told me it sounded like I underbaked the cupcakes. My tester came out clean, but he said to leave them in just a few minutes more...and to use a thermometer to check that my oven really was at the right temp.

I hope that's at least a little helpful!

Thanks Sassy Sweet I figured that was what happened because a few weeks later I asked my husband to take a cake out for me thinking it was done. When I went to check the same thing happened to it and it wasn't fully baked! icon_cry.gif

Oooh, I can totally relate. Don't you hate that? They seem so round and perfect when they come out, then 5 minutes later they are shrunken and wrinkled icon_sad.gif This happened a lot to me when I first got my Kitchen Aid mixer. I think over mixing/beating the batter makes lots of air bubbles that makes the cupcake structure not as strong. Could be wrong though, but I found that beating at a lower speed helps a lot.

I'm not sure why it does that either but mine did that the other day, luckily it was just for my husband and I, but otherwise, not sat.
