can you use a scratch cake mix instead of a box mix? for the ones that ask for a box mix base? any help would be great! icon_biggrin.gif

What is a "scratch cake mix"? Is that when you get all the dry ingredients for a cake together in a ziplock baggie? I've never heard of it.

Yup, I make my own cake mixes and use them for these recipes and they work beautifully and deliciously! Just google it and you'll find the steps. Although when recipes call for flavoured cake mixes, I obviously can't do anything about that so I just play with the white base.

I finally found banana instant pudding! Going to try making the Banana Cake tomorrow and will let you know how it turns out *nervous*

I made the Banana cake and it turned out yummy! But I didn't really follow the recipe in the document. I just did minor changes to the original WASC like adding some banana extract, whole eggs and mashed bananas, didn't even add banana pudding and it still turned out great. I layered it with chocolate fudge and banana cream fillings, yummy.

That's Great to hear about the banana cakE! Did you use the White cake mixes or half white, half banana because I have been to five different groceries and can't find banana cake mix here.

Steffla, here is the Cake Mix Doctor's recipe and she uses a yellow mix.

I don't have banana cake mix, either - I start with white and add 4 bananas plus extract.

Thank you so much! My plan was the extract but thanks for the tip on the extra banana too!

I make my own cake mixes, which are always white, so I use that as my base. So I can't really add flavoured mixes, unless I figure out how to make my own hehe

And I don't get in the habit of adding flavoured pudding mixes either because they're not so easy to find here. Just the standard vanilla, chocolate and butterscotch will be available.

Try it out with white, it has a nice banana-y flavour! Especially if you had the flavoured yoghourts, extracts, pudding etc.

Hey!

I was hoping to get some feedback on the Chai Spice cake? I wanted to make it for my dad's birthday this week. Also, what would be the best filling option for this cake? I'm interested in trying to make the spice concentrate!

Thanks!!

I haven't tried the specific chai cake in the thread, but I've made one before and it pared wonderfully with pistachio filling (pistachio pudding made with heavy cream and whipped to a mousse like texture).

I just wanted to know if any one has done any of these flavors for a stacked wedding cake? If so, which flavors and how were the reviews? Sorry if this has been asked before But I'v spend reading this thread for 3 days now and am going cross eyed. Thanks in advance for your input.

You can put regular kahlua in it. In fact I prefer it. The alcohol bakes off. icon_smile.gif
