Best Carrot Cake??? Also Crusting Creamcheese Bc ?? Help :(

Hi everyone, Im really really needing a yummy carrot cake recipe for my SIL's baby shower this coming weekend. She loves carrot cake and I really would like to give her the best.
The cake i will be making for her is going to be 2 round layers. It will either be 6" and 10" or 8" and 10". I will most likely cover it in fondant with cream cheese icing underneath. Unless anyone knows of a crusting cream cheese Buttercream icing?

Hi Jeannie, Im something of a beginner too, but i do like the carrot cake recipe i use. Its Ina Gartens, and can be found on the website of the network she airs on, if you search for carrot and pineapple cake. I use a small can of crushed pineapple or tidbits, but im pretty sure you could leave it out. Also, this is the cream cheese icing recipe I use:
1/2 cup butter
1/2 cup shortening
8 oz cream cheese
2 lb powdered sugar
1T vanilla
1/4 t salt
Ive also used salted butter and omitted the salt. Again, I'm no pro, so theres no guaratee youll like these recipes, but my friends and family do. Hope it helps.

Here's a carrot cake recipe my mom got from a friend. It's the first thing I ever baked, and it's delicious. Crusty top with moist interior.
Ingredients
INGREDIENTS
2 cups shredded carrot
2 cups flour [wheat flour works even better]
2 cups sugar
¼ tsp cinnamom
¼ tsp baking powder
¼ tsp baking soda
3 tsp vanilla
3 eggs
2/3 cup oil
1 cup chopped nuts
Preheat oven to 350F (180 C) and grease 2 8inch round pans.
This part may seem weird, but just dump together all ingredients and mix, or mix dry and wet separate if you want.
Bake for 45 minutes, or until skewer inserted comes clean.

Oh, I'm so glad this topic came up. My husband is a dear fan of carrot cake and cream cheese icing. And I've always wondered if there was a crusting recipe.

Carrott Cake III
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
Icing
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

I haven't baked this cake but judging by the 98% approval rating, and by dailey's endorsement, I personally wouldn't worry about the cake rising properly. I have quite a few recipes that use soda only, including my favorite chocolate cake recipe. I'm going to trust the reviews and give it a try
