This is related to another posting I did, but that one focused more on the mixer instead of the issue of whether or not the NFSC can be doubled. Has anyone done it successfully without having trouble with it (additional spreading, etc.)?

I think I tried it once a long time ago...it must not have been too successful because I haven't done it since. I just can't remember. (menopause is such a delightful thing!)

I double it all the time, in fact I don't know that I've EVER made a single batch of it!!! I don't add the baking powder though so maybe that's why it works.......I don't add ANY to it! Oh and I half the butter and add crisco in place of the other half....because when I first used the recipe I loved the flavor but had a terrible time with it spreading, now it's perfect!!! I use it for all of my cookies

I have a 6qt mixer, only doubled once and will never do again!

I just use a big bowl and a hand mixer until I've added all but about 3 or 4 cups of the flour and then work the rest in by hand!

The only way I can double it is to have both 6quarts going at one time. I only do this at Chritmas time. icon_biggrin.gif

My mixer isn't big enough!

Uh, oh! I am not getting the warm fuzzies on being able to double this in a 6 qt. mixer! Smab109 - may I ask what happened when you tried?

Tracy...I do this ALL the time! My KA works just fine with a double batch! thumbs_up.gif

Setting the mixer size aside ... I ONLY make double and triple batches and don't see any performance difference in the dough. I keep leftover dough in the 'frig and just pull out what I need when I need it.

Ok, isn't this recipe already doubled? In the recipe it says you can make five dozen three inch cookies! Just my thought I already thought it was doubled!

I tried it once, and it's the only time that they ever spread. It wouldn't mix well in my 6Qt mixer and I had to do it by hand.

Thanks everyone! Indydebi - you have provided the answer to the big question if it will actually double (or triple) successfully without differences in results! Thank you!!! icon_biggrin.gif Now it appears that it is all a matter of the mixer size and I am not seeing good results with the 6 qt KA, but at least I know it can be doubled! Hmmm.. but Joanne made it work in a KA, but she is the only one I can see that has been able to do it.

Silvercat - I don't know about if it is already doubled. I use the recipe calling for 6 cups flour (1 lb 12 oz.)and am trying to take it to 12.

I have the KA PRO 600 and I have never doubled that specific recipe but it is rated to handle 14 cups of flour. I double and triple my bread recipes all the time and they take any were from 12 to 14 cups of flour and it works fine.

Aubrazacmom - that is good to know! I had read in the KA forums that the KA 600 didn't do so well with the 14 it states, so I am glad to hear otherwise. Thanks!

I made a batch of NFSC with the six cups of flour and than also decided to try the chocolate sugar cookies. Well the chocolate sugar cookie recipe only calls for 2.5 cups of flour and .5 cup of cocoa so I am guessing the normal NFSC recipe we all use is already doubled, bc I double the chocolate one without a problem. I havent baked up the chocolate ones yet but will later and let you all know how they come out! Oh and I do this all in my 4.5quart KA mixer and they come out GREAT!

I'm guessing that Indydebi has a commercial size mixer, and that may be why she has been fine doubling the recipe and some others have not. Unless you want to mix with a hand mixer and finish with your hands like Khalstead does, I wouldn't recommend it without a commercial size mixer. It's the only time my no fails failed...they spread really bad even after the cutouts were frozen.

Yes, Indydebi has a commercial mixer, so that would explain how she does it. icon_biggrin.gif At least we know it works with the right machine. I think I will need to just use two bowls so I can interchange them in order to make two separate batches on my 5 qt to make things a bit faster. I think that is the best I can do.

I just followed the NFSC with six cups of flour. But the chocolate sugar cookie only called for 2.5 cups flour and .5 cup of cocoa. So I doubled the recipe for the chocolate sugar cookies. It is the same recipe as the NFSC but you sub a .5 cup of flour for cocoa. Sorry if I am not clear on this.

Hi Tracy,
I can't answer your specific question about doubling the NFSC, but I do own the KA Pro 600 and the smaller KA 4 1/2 quart mixer. I use the smaller one for RI and the bigger one for most everything else. The thing I like about the 600 is that it mixes the dough very well, with nothing sticking to the bottom of the bowl, and when you add the flour it has a soft start and doesn't puff up in the air and get all over the place (if you know what I mean). The things I don't like about it are 1) it seems kind of noisy, and 2) I don't love the bowl lift design - I think it's awkward sometimes getting the paddle out and think that with a double recipe of NFSC it would be pretty hard. I've never tried it, though so I can't say for sure. I prefer the tilt back on my 4 1/2 KA and I like the size of it, as I can slide it under my kitchen cabinets in the corner. The 600 is too tall to fit under my cabinets. I wouldn't think of getting rid of my 600, but another option would be to just buy an extra mixing bowl that you could just measure two batches at a time. The mixing itself just takes a few minutes. Hope this helps.

Silvercat - Heavens, I am sure everyone but me understood. icon_redface.gif Little sleep deprived on this end! So it sounds like your doubling equals 6 cups total. (Unless I am really, really out of it! icon_biggrin.gif )

Pebbles13 - Thanks for the hints. I am going with the two bowl plan rather than risk messing up a new 600. Cookiemookie mentioned that idea to me as well as she uses mulitple bowls.

Yes the chocolate recipe I ended using a total of 5 cups of flour and 1 cup of cocoa which equals six cups just like the regular NFSC recipe. So the NFSC is already doubled to start with. Ok where are all the other cookie guru's? I am so sorry I can't clear my thoughts and type them clear enough for you. I hope this helps you.
