Comparto receta

Hershey's "Perfectly Chocolate" Cupcakes (I halved this and got exactly 15) thumbs_up.gif
Makes 30 regular cupcakes OR 96 mini cupcakes

2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water (I dissolved 1 Tbsp of instant coffee into the boiling water for half a recipe)

Line muffin cups with paper baking cups. Heat oven to 350°F.
Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Fill cups 2/3 full with batter.
Bake 18-22 minutes (mine were done at 17) or until toothpick inserted in the center comes out clean. Cool completely on wire rack before frosting.

Coffee Meringue (adapted from Cupcakes! by Elinor Klivans)
Makes enough for 15-18 cupcakes icon_biggrin.gifthumbs_up.gif

1 3/4 cups granulated sugar
1/4 cup water
3 egg whites
1/4 tsp cream of tartar
1 Tbsp hot water
2 tsp instant coffee granules

Put sugar, water, egg whites, and cream of tartar into the top of a double boiler over a pan of simmering water. Whisking constantly, cook until sugar has dissolved and mixture is warm (about 160 degrees). Pour heated egg whites into the bowl of an electric mixer fitted with the whisk attachment. Beat egg white mixture on high speed until it forms stiff (but not dry) peaks, about 7 minutes. Meanwhile, stir instant coffee into hot water until dissolved. Reduce mixer speed to low and add coffee mixture.

Chocolate Coating (This makes a LOT, but you need the chocolate to be deep enough to dip all the cupcakes)
2 cups (12 oz) semi-sweet chocolate chips
3 tablespoons canola or vegetable oil

Put the chocolate and oil in a heatproof bowl or the top of a double boiler and place it over a pot of barely simmering water. Stir until the chocolate is just melted. Scrape it into a bowl and cool slightly, about 15 minutes.

Tenderness: 5
Frosting: 5

Un merengue de cafe, wow debe de ser delicioso, cuantas recetas he conocido en este sitio, voy a practicarlo. a mi me encanta el cafe... Yo siempre digo que mi mama en lugar de leche me daba cafe en los biberones.... poruqe tomo mucho cafe, bueno ya no tanto porque me lo prohibieron pero si me gusta el sabor del cafe...

icon_surprised.gif Adoro el café...su aroma, como invita a pensar, a leer, a conversar.
La combinación ( " el casamiento")entre cafe y chocolate me parece deliciosa, por eso pensé que compartir esta receta iba a seducir.
No prepáré el coating, pero creo que debe ser perfecto!!En las fotos mojaban el cupcake ya con el merengue de café, en el baño; lo dejaban "gotear" y luego que se endureciera.Sisita: Increíble!! icon_biggrin.gif

Gracias deby por las recetas esa de cafe suena deliciosa la de Hershey's cupcakes es extraordinaria es la que uso yo para mis pasteles de chocolate pero nunca he tratado de hacer los cupcakes con ella, solo los cakes, es la receta mas deliciosa que he probado hablando de pasteles de chocolate thumbs_up.gif

Thank You sisita amiga perdona que no haya entrado despues para postearles la receta pero esque no tuve mucho tiepo es que se me junto lo san valentin y tambien que el viernes fue mi aniversario de bodas thumbs_up.gifthumbs_up.gifthumbs_up.gif , pueden creerlo ya tengo 12 anios de casada con el hombre mas perfecto del mundo icon_confused.gificon_confused.gif , bueno pues parami pues icon_redface.gificon_redface.gif , es el mas perfecto del mundo icon_lol.gificon_lol.gificon_lol.gif , y ayer ya me empezaron a llegar visitas que no recibi el viernes y venian a felicitarnos y no tuve tiempo de entrar, deby amiga estaba leyendo la receta y es casi la misma cosa pero aqui se las dejo austedes y a todas las que les interese es super deliciosa pero eso si les digo, NO sirve para hacer carving porque es super moist pero es como les digo increible aqui se las dejo:


Hershey's chocolate cake:


1/2 cup de mantequilla sin sal derretida y a temperatura ambiente o pueden usar aceite vegetal

3/4 de taza de polvo de cocoa Hershey's por supuesto icon_lol.gif, mas unas dos cucharaditas para los moldes.

2 tazas de azucar

1 3/4 de harina de todo uso

1 1/2 cucharadita de baking soda

1 1/2 cucharadita de baking powder

1 cucharadita de sal

1 taza de leche, a teperatura ambiente

2 huevos grandes, (los baten un poquito en una tacita con un tenedor)

2 dos cucharadas de vainilla extract

1 taza de agua hiviendo

Ponga en rack en el centro de su oven y precalientenlo a 350 F. se preparan los moldes con un poquito de mantequilla y en vez de harina se le pone polvo de cocoa, (igual que como los preparan para el pastel normal pero se le pone cocoa en vez de harina) Se le pone parchment paper en el fondo para que no se vaya a pegar (algunas veces si no tengo a la mano uso papel encerado o no le pongo nada y me trabaja bien.)

En un bowl grande se pone 3/4 de cocoa, el azucar, el harina, el baking powder, el baking soda, y la sal. Se le aniade la mantequilla o aceite, la leche, los huevos y la vainilla. Usando velocidad media por dos minutos se le aniade el agua hirviendo y se continua batiendo (la masa se va a ver bien liquida pero es normal) se divide la masa en partes iguales en los moldes ya preparados

Hornee hasta que el cuchillito o un palillo salga limpio, cerca de 30 a 35 minutos. Se dejan enfriar por 10 minutos . y se desmoldan en un rack y se dejan enfriar completamente.

Chocolate frosting.

1 taza de mantequilla sin sal
1 1/3 taza de cocoa
6 tazas de azucar glas
2/3 taza de leche, un poquito mas si lo desean mas blandito
2 cucharaditas de vainilla *(yo usualmente le pongo cognac si no van a comer mis babys)

En un cacerolita se derrite la mantequilla. Se le aniade cocoa y se bate en la batidora hasta que se convine.

Alternadamente se le agrega el azucar glas y la leche batiendo a velocidad media hasta que el frosting alcance una consistencia para untar. Aniada vainilla y continue batiendo por 2 min. Agregue la leche adicional a como lo valla necesitando hasta lograr la consistencia deseada.

Rinde para 4 tazas de frosting.

Uff!! amigas termine como la ven con mi espaniol hice mi mejor esfuerzo para traducirla ya que la tengo en ingles pero si las enrede un poquito escribame con sus dudas y con todo el amor del mundo les ayudo thumbs_up.gifthumbs_up.gif , las quiero mucho y les mando muchas bendiciones, y les mando muchas felicitaciones por el dia de san valentin tarde pero segura thumbs_up.gifthumbs_up.gif

Para todas las amantes del Red Velvet Cake aqui les dejo una recetita de cupcakes espero que les guste, yo la trate y me encanto el frosting de mascarpone es delicioso espero que les sirva thumbs_up.gifthumbs_up.gif , :Las quiero mucho y les mando muchos saluditos, nos leemos luego amigas. thumbs_up.gif.

Red Velvet Cupcakes

1 1/8 cups sifted cake flour (10 tbsp)
1 tbsp cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cups sugar
1/4 cup butter, softened
1 egg
1/2 cup buttermilk
1 1/2 tsp red food coloring
1/2 tsp apple cider vinegar
1 tsp vanilla extract
Preheat oven to 350F. Grease cupcake tins or line with paper liners.
In a medium bowl, sift together cake flour, cocoa, baking powder, baking soda and salt. In a small bowl, whisk together buttermilk, food coloring, vinegar and vanilla extract.
In a large bowl, cream together butter and sugar. Add in egg and beat until smooth. Add dry ingredients in 4 additions, alternating with 3 additions of the buttermilk mixture, scraping the sides of the bowl as necessary. Stir until just combined.
Spoon batter into prepared cupcake tins. Fill them 2/3 to 3/4 full, which will create nice, rounded tops.
Bake mini cupcakes for 15 minutes and regular cupcake for 20-22 minutes, until a toothpick comes out clean.
Yield: 7 large and 12 mini cupcakes, with more than enough frosting to top each one thickly (or 12 full-sized cupcakes!)

Mascarpone frosting
8 oz mascarpone cheese, room temperature
2 tbsp butter, room temperature
2 tsp vanilla paste (extract is fine)
1 tbsp milk
1 1/4 cups confectioners sugar
Beat together mascarpone and butter until well combined. Beat in vanilla and milk. Add in confectioners sugar, scraping down the bowl as you go. When it has all been incorporated, beat on high speed for 1-2 minutes, until icing is smooth.

1-que tamaño de molde recomiendas?
2- un tema de denominación:el cocoa Hershey's , es cocoa en polvo para preparar chocolatada o es el que aquí llamamos cacao ,es semi amargo en polvo y se usa solo para repostería?

Amiga yo uso 2 moldes de 8" para no tener que cortarlos por el medio y rellenarlos y la cocoa es la que te pongo en la foto aqui abajo, de verdad amiga este es mi favorito de chocolate porque es super moist, ah!! yo le pongo filling de fresa en el medio.

Pero me quedó clarísimo!! El Hershey´s es el que aquí denominamos cacao y la mejor marca es Fénix.(Chocolate de buena famlia!!)

Mi mama hacer una cubierta de chocolate usando la cocoa, ella derrite un poco de mantequilla, le agrega la cocoa y un poquito de leche y esencia de vainilla y hace una cubierta que se la echa al pastel y queda deliciosa... no me se las cantidades que usa, pero esos son los ingredientes...

2 large eggs, at room temperature
1 teaspoon peppermint extract
1/2 cup chocolate milk
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup (6 ounces) mini semi-sweet chocolate chips



Mint Swiss Meringue Buttercream
Makes about 3 cups

3 egg whites
3/4 cup granulated sugar
1/2 cup (1 stick) unsalted butter, at room temperature
1 teaspoon peppermint extract
DIRECTIONSCakes:
Preheat the oven to 350°F. Insert liners into a medium cupcake pan.
In a large bowl cream together the butter and sugar with an electric mixer on medium speed until light and fluffy, 3-5 minutes. Beat the melted chocolate into the butter mixture. Add the eggs, peppermint extract, and chocolate milk. Beat until creamy.
In a separate medium-sized bowl combine the flour and baking soda.
Add the dry ingredients to the chocolate mixture and beat until well blended (DO NOT OVER BEAT). With a rubber spatula, stir in the chocolate chips.
Fill the cupcake liners 2/3-3/4 full. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool cupcakes in pan.
Mint Swiss Meringue Buttercream (recipe adapted from marthastewart.com)

Pour heated egg mixture into a clean bowl of a mixer fitted with the whisk attachment. Beat egg white mixture on high speed until it forms stiff (but not dry) peaks. Continue beating until fluffy and cooled, about 6 minutes (It's very important to beat it for the whole 6 minutes).
Switch to the paddle attachment. With mixer on medium-low, add butter several tablespoons at a time, beating well after each addition. (If frosting appears soupy or separated after all butter has been added, beat on medium-high speed until smooth again, 3 to 5 minutes more.)
Beat in peppermint extract. Reduce speed to low; beat 2 minutes to eliminate air bubbles. Stir with a rubber spatula until smooth.

que rica la receta...yo hago un tres leches de chocolate con menta y sale muy rico y si lo quieren envinado le pongo licor dementa..sensacional, fijate sisita que yo tambien hago una cubierta para cake con cocoa y mantequilla,derrito la mantequilla y le agrego cocoa, cafe instantaneo, concentrado de chocolate, yron, lo pongo tibio sobre el cake despues lo pones en la nevera y queda lindo y con brillo,

yo hago el biz con cocoa y a las tres leches le agrego tambien, le pongo escencia de menta fria,(asi se llama) y le pongo escencia de chocolate y ron o licor de menta si es envinado, es un tres leches de chocolate a la menta envinado o sin envinar. esa es mi receta inventada por mi y que se vende muy bien.
