I just dipped pretzels and Oreos in Wilton candy melts and some are cloudy. I put the first batch in the fridge and thought that was the cause. So for the second, I let them set up on the counter. Some still got that pitted/cloudy look to them while a few stayed nice and shiny. Should I try a different brand or did my method make the difference somewhere? Thanks for any help
Bumping you up for some help.
(I'm no chocolate pro at all, but I believe the problem is caused by the chocolate "blooming". Bloom is a problem caused when chocolate is over-heated and then cooled. It makes the cocoa butter/fats in the chocolate rise to the surface, producing that "cloudy" look.)
Anyone?
It is likely that your melts got too hot. Next time, try heating them until they are most of the way melted and then stir them until the rest of the pieces melt completely. This should help you control the temperature a bit more.
