fiddle - yep! I would give your shells some time to set up first, just so the marshmallow doesn't push down too much. But exactly like you said, works real well.

Thanks ! Well I normally coat my molds and pop in the freezer for a min and then finish. It so much faster that way!
Have you ever tried adding...say a fudge cake filling or a thick icing into a shell? Nothing you have to roll, but just drop a glob in and seal up ?
Im wondering if it makes a creamy center? Maybe a good way to use up some left over ingredients and get a different variety of candy?
Any thoughts ??

Hi everybody! My PB cups turned out wonderfully! They should be arriving in Afghanistan any day now. I hope she likes them.

I've been off the site for about a week and missed about three pages of this thread! But I was off for great reasons that I have to share! I had a reunion with my 14yr old son and my ex-husband. lol, I know that sounds a bit odd to be excited about talking to my ex. We were quite young when we married and the only reason we got divorced is because at the time he didn't want to be married. We've been through you know what the past 10 years, but we're talking again and we've become great friends again. I haven't seen my son in 4 years, but I will be seeing them both on the 10th of December! My ex used the internet to find me. He called a ranch I used to live at and they gave him my cell # and my best friends cell #. After he called her, I returned his call and we talked on and off all day last saturday and we've talked every day since. My son and I had a great talk and he's really excited that I'm flying up to see him.

Fiddlesticks, what part of Indiana are you in? That's where my ex and my son live. Somewhere just north of Indianapolis.

Has anyone tried the White choc pumpkin ganache? Someone mentioned using leftover icing to fill chocolates....I saw a reciped online when I was searching for a coffee flavored buttercream that was meant to be used in truffles, so I'm sure that leftover icing would work.

Sorry for the long post. I'm just really excited. Not only are my ex and my son and I reuniting, but I'm also going to see my two older brothers that I haven't seen in 7 years next friday! This holiday season is going to be just awesome for me! icon_biggrin.gif

sayhellojana. Thanks , I have some left over fudge filling I just used for cherry bon bons ( my photos) From a new recipe I just tried,And I put it in the fridge and it thickened up enough to form ( sort of ) a ball or at least spoon in to a mold. Im thinking that would be like a creamy truffle filling maybe. Its delicious so I hate to waste any of it. Well I dont think Iwill get to try it today but maybe tmrw when hubby is watching football. Its worth a try anyway. I just wonder where the cut off is that you cant use what ever you want for a filling inside choc? Im also going to try some homemade caramel inside to !

Heavensgait--I'm so happy for you. That's great news. Tell us how everything goes.

I'm getting ready to make the white chocolate-pumpkin ganache tomorrow. Do I use fresh pumpkin puree or can I used the canned stuff?

marshmallows piped into chocolate. My DH would love these since he buys these kinds of treats a lot. I swear that man is made up of 1/2 sugar. He loves his sweets.

Guess where I saw the ghiradelli chocolate dipping bars?

done guessing?

Walmart.

They weren't the big, 2.5 lb bars though. They were 12oz, and $3.44. More expensive than real chocolate, so I didn't get them, but it's good to know that you can get it there if you're in a fix. I did go to Sam's with my Aunt today, and they didn't have them. I was SOOO disappointed.

Pumpkin Fudge - ac0474
2 T. butter
2.75 c. sugar
2/3 c. evaporated milk (5 oz. can)
6 oz. white chips
3 oz. marshmallow creme
3/4 c. pumpkin puree
1 t. cinnamon
1 t. vanilla
Line a 9x9 pan with aluminum foil and set aside.
Heat milk and sugar over Medium heat in a 3 quart saucepan; bring to a boil while stirring occasionally with a wooden spoon. Add the pumpkin puree and cinnamon and bring back to boil for 2 minutes. Add the marshmallow to the hot pumpkin mixture- the whole mixute will expand as the marshmallow heats so be careful the saucepan is large enough. Bring the whole mixture back to a low rolling boil stirring occasionally for 10 mins. If you have a candy thermometer, the boiling point will be about 240 degrees.
Remove from heat and add white chips and vanilla. Stir til creamy and all chips are melted. Pour into prepared pan. Cool.
Note: 1 cup of walnuts may be added, if desired. Add after chips are all melted.

Has anyone ever used Red Cinnamon Crunch in any of their candy/chocolate making?

I bought a bag and now I can't think of anything to do with it other than maybe with white choc. to make a Cinnamon Bark.

I use the crunches but have never tried that flavor! I make crunch barks or choc cups with my crunches mostly!

Kathy, I have the red & green and also the lime and I am going to mix them with some vanilla bark I think for Christmas! Was thinking to the lime crunches might be good on a cupcake!

Hey all!
I've been trying for days and CC was not working because of the maintenence. It's still not loading the bottom half of pages for me, so I'm sure I missed some stuff on the last page.
I found the yummiest, simplest filling. I made some shells and my marshmallow to pipe into them, and then had an idea. I piped tiny amounts of peanutbutter into the shells first, then the marshmallow. They are SO yummy. Its just a small amount of peanut butter, but with the marshmallow is magical

anyone else try anything good?

I made the white-chocolate-pumpkin ganache and it was really good. I think I would like to try it with semi-sweet though next time. Thinking about making them for Thanksgiving.

I was busy making chocolates for some of DH's clients this past week. They each got 6 different pieces of chocolate in a box. It's amazing how time consuming making chocolate is. I have a lot more to do but I will start again the beginning of December. Hope you are all doing well and keeping busy.

This thread has slown down quite a bit, probably because of the upcoming holiday and maintenance.
I just finished making some chocolate "dessert cups." I'm going to cut small squares of pound cake to put in them and then will pour a bit of raspberry mint syrup and top with fresh raspberries. I'm making the pumpkin pie too, but I wanted an alternate dessert. The chocolate cups look so pretty, I'm really glad I bought the mold

I love that mold . I made it in the past and filled it with a peanut butter mouse with choc shavings on top! Theres so much you can do with it. Im sure all the threads would pick up if we can ever get on ! Happy Thanksgiving!

ok ladies, where did you buy this great chocolate cup mold from?
I like filling chocolate cups (depending on the size) with either mousses, cheesecake or my personal favorite of liquor with a piece of soaked fruit (like a cherry) on the bottom.
