Hi all, I am new and this is my first post. I was told about this site and about the buttercream dream recipe. I need to make 6 dozen cupcakes for a Halloween party. I just want to do a basic swirl on my cupcakes. I printed the buttercream dream recipe, but I am wondering how much icing do I need to make for 6 dozen cupcakes, the recipe doesn't say what the yield is? Also, does this buttercream crust over? A local bakery has a really good buttercream and it gets crusty after a day or so and I was wondering does buttercream dream crust over or stay soft? Thanks for all your help!!
I don't have an answer for how much to make for all your cupcakes. All I can say is that I love this recipe and it does not crust.
I use the Buttercream Dream recipe as my regular BC. For 6 dozen cupcakes you will need 1 1/2 to 2 batches depending on how much you swirl on top. I believe I've been able to frost 4 dozen with a single batch.
I kind of like the crusting buttercream, is there a way to make buttercream dream crusting? I have to transport them and I worry about the icing staying soft and smooshing? I am new at this so I can use all the help I can get!! Thanks so much!
Hi. I don't know if this will help you. But last year I used this icing recipe for my mom's birthday cake. It was a 1/4 sheet cake (not cupcakes). It was in August, and I had to drive 3 hours to the Jersey shore where the party was held. (So you know it was hot outside!) Also, the cake was not refrigerated for a good portion of the day and it held up fabulously! I didn't have any trouble, and everyone loved it and said it was one of the best icings they've ever had!
Buttercream dream actually is a crusting buttercream. It is the ratio of sugar to fat that make it crust and this ones ratio is just fine for crusting. If you'd like it to crust more, then just add more PS. I've used this recipe tons of times (it is my go to recipe) and it always crusts in my hands. Hope that helps!
Buttercream Dream DOES crust. I have used it on cupcakes, regular cakes, and sugar cookies. I like to refrigerate after decorating, and it usually crusts well in the fridge!! I would say a batch and a half for the cupcakes . . . maybe 2 to be safe!! Good luck, this is the best recipe!!!
My buttercream dream always crusts. I use it for all my cakes/cupcakes. I think you should make 2 batches,because no one knows how much icing your swirl will take. We all use a different amount, and different tip to make our swirls!

I could not get it to crust using store bought shortening, but I finally got it to crust using Alpine hi-ratio shortening. It definitely needs that extra fat I guess. Guess who else is getting extra fat with Buttercream Dream?!?! Yum!

My BC always crusts over. It takes a couple of hours maybe 2-3 at the most and it starts to crust over.
If you need it to crust more try adding more sugar not more fat, the more fat the less it will crust... And you can add meringue powder or dried egg whites too.
